It has everything we love about classic lasagna — rich tomato broth, hearty ground beef, savory sausage, tender noodles — but it comes together in a single pot on the stove. No layering. No baking.

I buy the skinny noodles at TJ Maxx in the food section. I break each long noodle into 3-4 pieces. But you can also use regular lasagna noodles broken into pieces.

Stir occasionally while noodles cook
Lasagna noodles are starchier than regular pasta and can stick if ignored. A quick stir every couple minutes keeps everything moving and prevents clumping.
Adjust the thickness
Lasagna soup naturally thickens as it sits. If you like it brothy, add a splash of water or extra broth before serving leftovers. If you like it thick and hearty, let it simmer a little longer.
You can also use whatever type of diced tomatoes you prefer. You can use the plain diced tomatoes or the Italia ones. In these pictures, I’m using Rotel with chiles because that is the only kind I had on hand.


Finish with cheese at the table
Instead of stirring cheese into the pot, serve bowls with ricotta, mozzarella, or parmesan on top. It melts into the soup and gives that classic lasagna finish without over-thickening the base.
I like to mix the parmesan and the ricotta together and drop a spoonful or two into individual bowls just before serving. This way the cheese acts as more of a compliment than overpowering the tomato broth flavor.

Why Caldo de Tomate Makes Our One Pot Lasagna Soup Better
The secret to the deep tomato flavor in this soup isn’t complicated — it’s Knorr’s Caldo de Tomate. I use this stuff in everything from pastas to hispanic dishes!
This tomato bouillon adds a savory, slightly sweet, concentrated tomato base that tastes like it simmered all day. It boosts the broth without needing a long ingredient list or hours of cooking.

Now, if you don’t have Caldo de Tomate, no worries! You can always use regular chicken or beef broth.

One Pot Lasagna Soup
Ingredients
Lasagna Soup Base
- 1 lb Ground beef
- 1 lb Ground sausage We prefer Jimmy Dean, medium.
- ¾ cup Onion Diced
- 2 tsp Italian seasoning
- 1 tsp Garlic powder
- 20 oz Diced tomatoes Undrained
- 6 oz Tomato paste
- 16 oz Tomato sauce
- 4 cups Broth We prefer Knorr Caldo de Tomate. You can also use beef broth.
- 8 oz Lasagna noodles Half a box of lasagna noodles, broken into 3 inch pieces; Skinny lasagna noodles work great if you can find them but any lasagna noodles will work.
Lasagna Soup Topping
- 1 cup Ricotta cheese
- 1 cup Parmesan grated
- 1 tsp Salt
- 1 tsp Black pepper
- Basil Or parsley; a few sprigs for garnish (optional)
Instructions
Lasagna Soup
- In a large stock pot, brown ground beef and ground sausage together with the onion and seasonings. Drain meat and return to pot.
- Add undrained tomatoes, tomato paste, tomato sauce, and tomato broth (or chicken or beef broth).
- Bring to a boil over medium-high heat.
- Once mixture is at a boil, reduce heat to medium-low and add the noodles and cook for 10 minutes – until the noodles are soft and the mixture is a bit thick.
Make Cheese Topping
- In a small mixing bowl, mix the Ricotta cheese, Parmesan, salt, and black pepper.
- Add a drop of the cheese mixture onto the individual serving bowls of the soup. Garnish with shredded parsley or basil.
- Serve with warm crusty bread.
