Today, I’m going to share my white chocolate popcorn recipe. This recipe is also called almond bark puffcorn. Your hips will probably hate me for this puff popcorn with almond bark recipe, but your family will have much love for you and me both. Trust me.
Now, white chocolate popcorn is often made with regular popcorn and melted white chocolate chips. I have used the white chocolate chips and the almond bark both with success. However, I have never used regular popcorn because I don’t want to deal with fishing out kernels. I use the Chester’s Butter Puffcorn for this almond bark puffcorn. Make certain…make darn certain…you have the Chester’s Butter Puffcorn and not the Chester’s Cheese Puffcorn!
Making Almond Bark Puffcorn
The key, I have found, to perfect almond bark puffcorn is to make the popcorn in batches. I use two bags of Chester’s Puffs and one block of almond bark. However, if you pour on the almond bark too thick (meaning heating it all up at once and pouring it on), bad things can happen to your puffed popcorn. The coating gets all thick and clumpy. Then, you have some ugly popcorn or you can’t get to all the popcorn in the bottom of your bowl fast enough to get the coating on before it melts.
Therefore, I split both the Chester’s Puffs and the almond bark into fourths. It takes longer this way, but the popcorn gets a much more even consistency. I pour 1/4 of the puffs into a large bowl and have a large wooden spoon in easy reach. I put 1/4 bark in a microwave safe bowl and heat on high for 30 second intervals, stirring after each time.
After 60 seconds, I stir the puffed popcorn again and put it back in for 20 more seconds until completely melted and smooth. Of course, each microwave is different and your popcorn may not need that much time. If I were you, I would plan for 60 seconds or so and then evaluate.
Fast like lighting, I pour the melted bark over the Chester’s corn puffs and stir as evenly as I can. If you are even just a smidge late on the pouring and stirring, everything can get all clumped up.
As soon as the Chester’s corn puffs are coated, I lay them out flat on wax paper and let them cool for about 15 minutes or so. While they are cooling, I work on the other three batches of puffs/bark. This almond bark puffcorn also makes sweet gifts for teachers and coworkers.
Variations of White Chocolate Puffed Popcorn
This white chocolate popcorn treat is great plain. It has a delicious salty-sweet medley.
But sometimes, you need white chocolate puff popcorn with sprinkles. What party wouldn’t be better with almond bark puffcorn with sprinkles?
You can also add melted dark chocolate or milk chocolate as a drizzle like I did with the Ghirardelli dark chocolate for my wine and chocolate party. Then the white chocolate puffcorn becomes more of a double-chocolate popcorn treat.
This white chocolate popcorn is a party pleaser! I have made this sweet puff popcorn for baby showers with little labels that said, “She’s about to pop.” I have made it for wedding showers and other parties with labels that say, “Thank you for popping in.”
A friend of mine introduced me to this version of white chocolate puffcorn at a shower we co-hosted many years ago. Then, as much as now, I’m not sure why we refer to do it as white chocolate popcorn when it is actually almond bark puffcorn! Regardless, I knew it would become my go-to party snack. Hopefully, you like this stuff as much as we do around here!
White Chocolate Popcorn | Almond Bark Puffcorn - 2 Ingredients
Ingredients
- 2 bags 3.5 oz Chester's Puffs - Butter Flavor
- 1 brick of almond bark
- Sprinkles or chocolate drizzles optional
Instructions
- Pour 1/2 bag of Puffs into a large bowl.
- Place 1/4 brick of almond bark into a microwaveable-safe bowl.
- Microwave bark at 30 second intervals 2 separate times, stirring afterward each time.
- At the 60-second mark, evaluate to see if you need to heat again. If so, try 15-20 seconds so as not to burn the melted candy.
- Quickly, pour the almond bark over the bowl of puffs. Stir with a wooden spoon as you do, moving evenly and quickly. (If using sprinkles, pour them in now, as well.)
- Spread the puffs on wax paper and allow to dry 15 minutes or so. (If using melted chocolate drizzle, you would prepare that now and drizzle over the candy at this point.)
- Repeat all the steps with the remaining three batches of puffs/bark.

So I made this but my puffcorn got soggy and didn’t stay crunchy. What’s the trick to keep it crunchy?

Ashley, these puffs will always have a slight softness to them – but it is a good melt-in-your-mouth kind of softness. They shouldn’t turn out super soggy. I’m thinking if the mixture turned out too thick and the coating was too heavy, it could have led to an overly-soggy texture. I sure hope you will give them another try! 🙂
