If you’ve ever wanted your party dip to double as the centerpiece, let me introduce you to the bacon cheddar pineapple cheese ball with cream cheese — a creamy, savory-sweet appetizer that’s as fun to look at as it is to eat. This isn’t just a firm dip — it’s an edible conversation starter – a cheese ball that looks like a pineapple! It is THE perfect luau party food and summer party food!
Made with cream cheese, crushed pineapple, cheddar cheese, and crispy bacon, this delicious cheese ball gets shaped like a pineapple, adorned in crunchy pretzels, and topped with an actual pineapple crown. I mean… come on. She’s a star.

What’s in this Bacon Cheddar Pineapple Cheese Ball?
This cheese ball is equal parts tropical and savory, and it all starts with a dreamy cream cheese base. Here’s what you’ll need:
- Cream cheese (softened for easy mixing)
- Crushed pineapple (drained really well!)
- Shredded cheddar cheese
- Cooked, crumbled bacon
- A little seasoning if you want to spice it up (garlic powder or onion powder work great!)
- Rounded pretzels to cover the outside
- And of course — the green crown of a real pineapple for that show-stopping finish. Don’t be ashamed if you need a tutorial on how to remove the top of a pineapple!

Once mixed, the mixture is shaped into a pineapple-like oval, artfully covered in the rounded pretzels to mimic a pineapple’s textured skin, and crowned with the real top. It’s a little ridiculous and totally party fabulous!

Serve it with sturdy crackers, pretzel chips, or even sliced bell peppers if you’re feeling virtuous (but honestly… bring the carbs).

Presentation Tips
- Use a platter big enough to give it room to shine. We have the pineapple board out for this one. but it isn’t necessary. Any long platter would do. Just make sure there is enough room to add crackers around the cheese ball.
- Keep the pineapple top chilled until just before serving, so it stays nice and fresh-looking.
- Press in the pretzels gently but evenly — the goal is full pineapple glam, not patchy pretzel chaos. We used around 30 pretzels to achieve the effect.

Bacon Cheddar Pineapple Dip with Cream Cheese
Ingredients
- ½ Pineapple chopped (fresh pineapple; reserving the crown)
- 16 oz Cream cheese softened
- 2 cups Cheddar cheese shredded
- 1 cup Bacon crispy and chopped
- 1 tsp Garlic powder
- 1 cup Pretzels standard round pretzels
Instructions
- Cut off the green top (crown) of the pineapple. Peel the pulp from the skin and tough core, and chop the pineapple into small pieces. Squeeze the pineapple to release excess juice – allowing to drain a few minutes.
- Place the softened cream cheese in a bowl. Mix it with the grated cheddar.
- Using your preferred method, cook the bacon until crisp, and chop into small squares.
- Combine the pineapple, cream cheese and cheddar mixture, bacon, and garlic powder in a bowl. Mix until well blended.
- Place the mixture on a large piece of plastic wrap, shape into an oval, tapering towards the top. Tighten the wrap on the open ends and leave the cheese ball in the refrigerator for 4 hours to overnight. (The longer, the better!)
- Place the pineapple cheese ball on a board, insert the top (crown) of a real pineapple into the more narrow part (top) of the cheese ball. Cover the appetizer with pretzels to mimic the outer texture on a pineapple, pressing lightly.
- Serve the appetizer on a board with crackers or chips.
