- 1 lb Strawberries
- 1 Granny Smith apple 1 large or 2 small
- 2 Kiwis
- 8 oz Raspberries 1/2 pound
- 8 oz Blueberries
- 1 tbsp Brown sugar
- 1 Lemon juiced (or 2 tbsp of store-bought lemon juice)
- 3 tbsp Blackberry preserves can also use other fruit preserves like strawberry
Wash the fruit as desired. Peel the kiwis and the apple.
On a cutting board, finely chop the strawberries, apple, and kiwi.
In a large mixing bowl, add the chopped fruit along with the raspberries and blueberries. With a masher or large spoon, stir the fruit while partially mashing it up. You don't want it completely mashed to the point of liquid, but you do want the fruit broken down a bit and not as solid as when you started.
Add the brown sugar, lemon juice, and preserves and stir until the mixture is well combined.
If desired, mix in or garnish with fresh mint when serving. Serve with homemade or store-bought cinnamon sugar pita chips.
Refrigerate until serving and refrigerate leftovers for 1-2 days. The fruit salsa will start to turn liquid-y if stored much longer than that.
