Stuffed Taco Tomatoes

These delicious stuffed taco tomatoes are perfect for those wishing to eat tacos without tortilla shells for a low-carb diet.

Ingredients

  • 1 lb Ground beef
  • ½ cup Onion chopped
  • 4 tbsp Taco seasoning
  • 4 Tomatoes large
  • 4 tbsp Sour cream
  • ½ cup Cheese shredded

Instructions

  • In medium skillet, brown ground beef with onions.
  • Stir in taco seasoning.
  • Cut the tomatoes across the top in a flat cut, removing the top completely. Then, add eight vertical slits all around each tomato, from top down - going at least halfway - no more than 2/3s way - down the tomato from top to bottom. (See photos.)
  • Fill tomatoes - going most of the way up - with cooked taco meat (or any other fillings of your choice).
  • Top with one tablespoon of sour cream and shredded cheese.
  • Add chopped green onions or cilantro.
  • Serve warm.
