- 1 lb Ground beef
- ½ cup Onion chopped
- 4 tbsp Taco seasoning
- 4 Tomatoes large
- 4 tbsp Sour cream
- ½ cup Cheese shredded
In medium skillet, brown ground beef with onions.
Stir in taco seasoning.
Cut the tomatoes across the top in a flat cut, removing the top completely. Then, add eight vertical slits all around each tomato, from top down - going at least halfway - no more than 2/3s way - down the tomato from top to bottom. (See photos.)
Fill tomatoes - going most of the way up - with cooked taco meat (or any other fillings of your choice).
Top with one tablespoon of sour cream and shredded cheese.
Add chopped green onions or cilantro.
Serve warm.
