These taco stuffed bell peppers are perfect as low carb tacos or Keto tacos. You may want to customize the fillings to meet your dietary needs.

Instructions
Preheat oven to 375℉.
In medium skillet, brown ground beef and drain.
Mix cooked rice into beef mixture.
Stir in taco seasoning, cheese, tomato sauce, and green peas.
Slice bell peppers lengthwise, scooping out seeds.
Clean and dry bell peppers.
Scoop filling evenly into the six bell pepper halves.
Top the bell pepper tacos with the diced tomatoes (you may need to gently press into the top).
Sprinkle each taco with a bit of olive oil.
Bake for 20-25 minutes until bell peppers shells appear softened.
Garnish with fresh cilantro before serving.
Notes
*If you are truly going for a a low carb taco, you might want to substitute the rice and peas with extra ground beef filling!
