Platanos Maduros - Fried Plantains

The fried plantains are the authentic platanos maduros of Panama. They are double-fried plantain slivers made from green plantain bananas. Maduros, also called tostones, are delicious served with a ketchup mayo sauce.

Ingredients

Fried Plantains

  • 2 Plantain bananas ripe; black or dark
  • ½ cup Vegetable oil you may need a little more
  • 1 tsp Salt

Ketchup Mayo Sauce

  • ½ cup Ketchup
  • ½ cup Mayonnaise

Instructions

  • Heat oil in a medium frying pan with a high rim. 
  • Peel and slice plantain into diagonal slices, about 1/2 inch thick. 
  • Fry 2-3 minutes on each side until edges are brown.
  • When both sides are evenly browned, remove slices with a slotted spoon or spatula and place on a plate lined with paper towels. 
  • Sprinkle slices with salt, if desired. 
  • Serve plantains with ketchup or with a ketchup mayo sauce.

Ketchup Mayo Sauce

  • In small bowl, mix ketchup and mayonnaise together.
