Blueberry Waffles
6cupsAll purpose flour
½cupGranulated sugar
¼cupBaking powder
1tspBaking soda
1½tspSalt
3½cupsMilk
1cupVegetable oil plus two tablespoons
4Eggslightly beaten
2cupsBlueberries
Instructions
To Make Blueberry Waffles
In mixing bowl, combine all dry ingredients.
Add all wet ingredients to bowl.
Mix until smooth and well-blended.
Add blueberries and mix again for 20-30 seconds.
Preheat waffle maker.
Once the waffle maker is adequately heated, add batter to the center of the lower grid. (You can use a measuring cup to do this, filling a bit at the time until the grid is filled evenly. Do not overfill the grids as batter may run over the edges. If you start with center first and spread batter outward with a spatula, you will reduce the chance of the batter running over the sides as waffles cook.)
As you remove each group of cooked waffles from the machine, you may place them on a baking pan in a 300 degree oven while the rest of the waffles cook. This will keep them warm.
Garnish with powdered sugar, syrup, and butter. You may also use pre-made blueberry sauce.
Notes
*You can use frozen blueberries in the waffles. But you need to thaw them and pat them dry before adding them to the waffle batter.
