Easy Pineapple and Pulled Pork Sliders

Ingredients

  • 12 Hawaiian rolls
  • 3 cups Pulled pork prepared and shredded
  • 1 cup Barbecue sauce Sweet Baby Ray's Hawaiian Barbecue Sauce; may add a bit more or less
  • 6 oz Pineapple bits drained
  • 8 tbsp Unsalted butter melted
  • 1 tsp Garlic powder
  • 6 slices Pepper Jack optional
  • 2 tbsp Parsley

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together melted butter and garlic powder until combined.
  • In a second bowl, mix 3 cups of prepared pork with 2/3 cup of barbecue sauce. You may opt to add a little more, but keep in mind you don't want soggy sliders.
  • Cut the slider buns in half, horizontally, keeping the bottom buns attached and the top buns attached (if possible).
  • Place the bottom half of the buns in a baking dish. Brush the bottoms with a bit of butter sauce.
  • Layer each bun evenly with the coated pulled pork. Spread the six slices of cheese across the pork so that it is evenly spaced out.
  • Evenly distribute the drained pineapple tidbits over the pork so that all sliders have some.
  • Place the other half of the buns on top, creating sandwich sliders.
  • Brush the remaining butter sauce over the tops of the sliders.
  • Optionally, sprinkle parsley over the sliders for added texture and flavor.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for about 15-20 minutes, or until the sliders are heated through and the cheese is melted.
  • Optional: remove foil and place sliders back in the oven for 2-5 minutes to brown the tops of the sliders a bit.
  • Remove from the oven and let them rest for a few minutes before serving. You may need to gently run a knife through the sandwiches - at the natural divisions of the rolls - to ensure the sliders will pull apart easily.
