Pie Crust
- 1 Graham cracker crust Prepared; 9 inches
Blueberry Cream Cheese Filling
- 8 oz Cream cheese
- ½ cup Powdered sugar
- 1 tsp Vanilla extract
- 4 tbsp Blueberry jam
- 2 cups Cool Whip divided; can also use one cup heavy cream; beating in a separate bowl until peaks form
- 1 cup Blueberries fresh; for garnish/topping
Prepare graham cracker pie crust according to box directions if making a homemade pie crust. Allow to cool while preparing the pie filling.
In a mixing bowl, beat cream cheese, powdered sugar, blueberry jam, and vanilla extract until smooth. Fold in one cup of Cool Whip.
Pour cream cheese mixture into the cooled pie shell. Set pie plate in the refrigerator until you are ready for the next step.
Allow the pie to set in the refrigerator for 3 hours or longer. Pie should be firm before slicing.
Top with additional Cool Whip (or homemade whipped cream) and fresh blueberries.
