Delicious Guacamole Wonton Taco Cups

These fiesta guacamole wonton taco cups are perfect for any occasion -but they are especially great as individual appetizers for a fiesta!

Ingredients

  • 1 lb Ground beef
  • ½ Bell pepper diced (can use any color)
  • 1 oz Taco seasoning
  • 8 oz Tomato sauce
  • 24 Wonton wrappers
  • 1 cup Refried beans
  • 2 cups Shredded cheese divided
  • ¼ cup Green onion chopped
  • ½ cup Guacamole
  • ½ cup Black olives

Instructions

  • In a medium skillet, brown the ground beef with the diced bell pepper. Strain meat and return to pan.
  • Spray a 12-tin muffin pan with cooking spray.
  • Lay one wonton wrapper in the bottom of each muffin tin.
  • Add one tablespoon of refried beans on top of each wrapper.
  • Criss-cross a second wonton wrapper over the beans.
  • Top the second wrapper with one tablespoon of taco meat.
  • Sprinkle the meat with 1/2 the shredded cheese.
  • Bake for 12-15 minutes at 350 degrees. (Edges should look crispy and slightly browned.)
  • Remove from the oven and place wonton cups on a serving tray, allowing to cool slightly.
  • Add other toppings as desired - adding plenty of guacamole, tomatoes or olives, and extra shredded cheese! Optionally, you can shredded lettuce, cilantro, and salsa.
