Delicious Guacamole Wonton Taco Cups
These fiesta guacamole wonton taco cups are perfect for any occasion -but they are especially great as individual appetizers for a fiesta!

- 1 lb Ground beef
- ½ Bell pepper diced (can use any color)
- 1 oz Taco seasoning
- 8 oz Tomato sauce
- 24 Wonton wrappers
- 1 cup Refried beans
- 2 cups Shredded cheese divided
- ¼ cup Green onion chopped
- ½ cup Guacamole
- ½ cup Black olives
In a medium skillet, brown the ground beef with the diced bell pepper. Strain meat and return to pan.
Spray a 12-tin muffin pan with cooking spray.
Lay one wonton wrapper in the bottom of each muffin tin.
Add one tablespoon of refried beans on top of each wrapper.
Criss-cross a second wonton wrapper over the beans.
Top the second wrapper with one tablespoon of taco meat.
Sprinkle the meat with 1/2 the shredded cheese.
Bake for 12-15 minutes at 350 degrees. (Edges should look crispy and slightly browned.)
Remove from the oven and place wonton cups on a serving tray, allowing to cool slightly.
Add other toppings as desired - adding plenty of guacamole, tomatoes or olives, and extra shredded cheese! Optionally, you can shredded lettuce, cilantro, and salsa.
