7 Can Taco Soup with Ranch Dressing Mix

This easy 7 can taco soup with ranch dressing mix is loaded with flavor and is a cinch to put together! This beef taco soup with black beans or pinto beans can be made on the stove or in a slow cooker.

Ingredients

  • 1 lb Ground beef lean
  • 1/2 Onion chopped
  • 1 can Pinto beans *drained, 16 oz
  • 1 can Light red kidney beans drained, 16 oz
  • 1 can Dark red kidney beans drained, 16 oz
  • 1 can Whole kernel corn drained, 16 oz
  • 1 can Stewed tomatoes undrained, 16 oz
  • 1 can Diced tomatoes with green chiles undrained, 16 oz
  • 1 can Tomato sauce 8 oz
  • 1 package Taco seasoning
  • 1 package Ranch dressing mix
  • 2 cups Water

Instructions

  • In a large soup pot, cook meat and onions until browned.
  • Drain the meat and return to the pot.
  • Make sure all beans and corn are thoroughly drained and add all ingredients to the pot.
  • Cover pot and simmer for about one hour.
  • Garnish with shredded cheese, sour cream, black olives, and cilantro. Serve with Fritos, tortilla chips, or corn muffins.

Notes

*any of the beans can be interchanged with black beans
