White Chocolate Chip and Almond Oatmeal Cookies – Cooking with Kids

Ingredients

  • 2 sticks unsalted butter
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 1 1/2 tbsp vanilla
  • 1 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 1/2 tbsp cinnamon
  • 3 cups oatmeal
  • 1/2 cup slivered almonds
  • 1 1/2 cup white chocolate chips
  • Sea salt for sprinkling

Instructions

  • Preheat oven to 350 degrees.
  • Cream butter and sugars in a large mixing bowl.
  • Add eggs and vanillla and beat until mixture appears uniform.
  • Add flour, baking powder, salt, and cinnamon. Mix well.
  • Add oatmeal, almonds, and white chocolate chips. Mix until combined.
  • Using a medium cookie scoop, scoop dough onto greased cookie sheets. Bake for 10-12 minutes or until bottoms appear slightly browned.
  • Sprinkle immediately with sea salt, careful not to add too much.
  • Move cookies to wire racks to cool completely.
