Cinnamon Toast Crunch Cookies with Oatmeal

Ingredients

  • cup Butter unsalted; softened (2.5 sticks)
  • 1 cup White sugar
  • 1 cup Brown sugar light
  • 2 Eggs
  • 1 1/2 tsp Vanilla
  • 1 1/2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 1 1/2 tbsp Cinnamon
  • 3 cups Oatmeal Old Fashioned Oats is what we use
  • 2 cups Cinnamon Toast Crunch Cereal

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, cream butter and sugars.
  • Add eggs and vanilla and mix well.
  • In a small bowl, combine flour, baking powder, salt, and cinnamon.
  • Slowly add flour mixture to mixing bowl.
  • Mix until well combined.
  • One cup at a time, add the oatmeal and the Cinnamon Toast Crunch Cereal.
  • Mix until just combined.
  • On an ungreased cookie sheet, drop 12 scoops of cookie dough, using a medium sized cookie scoop.
  • Bake for 10-12 minutes or until bottoms seem to be starting to brown.
  • Allow to cool for just a few minutes before moving to wire racks.
