Cinnamon Toast Crunch Cookies with Oatmeal

- 1¼ cup Butter unsalted; softened (2.5 sticks)
- 1 cup White sugar
- 1 cup Brown sugar light
- 2 Eggs
- 1 1/2 tsp Vanilla
- 1 1/2 cups All-purpose flour
- 1 tsp Baking powder
- 1 tsp Salt
- 1 1/2 tbsp Cinnamon
- 3 cups Oatmeal Old Fashioned Oats is what we use
- 2 cups Cinnamon Toast Crunch Cereal
Preheat oven to 350 degrees.
In a large mixing bowl, cream butter and sugars.
Add eggs and vanilla and mix well.
In a small bowl, combine flour, baking powder, salt, and cinnamon.
Slowly add flour mixture to mixing bowl.
Mix until well combined.
One cup at a time, add the oatmeal and the Cinnamon Toast Crunch Cereal.
Mix until just combined.
On an ungreased cookie sheet, drop 12 scoops of cookie dough, using a medium sized cookie scoop.
Bake for 10-12 minutes or until bottoms seem to be starting to brown.
Allow to cool for just a few minutes before moving to wire racks.
