7 Can Chicken Tortilla Soup (30 Minute Chicken Tortilla Soup)

Ingredients

  • 1 tbsp Olive oil
  • 1/2 cup Onion diced
  • 1/2 cup Green bell pepper diced
  • 2 Chicken breasts *cooked; shredded or chopped
  • 2 tsp Chili powder chipotle or regular chili powder
  • 2 tsp Cumin roasted or regular cumin
  • 15 oz Whole kernel corn drained
  • 16 oz Kidney beans (light red) drained
  • 16 oz Kidney beans (dark red) drained
  • 16 oz Pinto beans drained
  • 4.5 oz Green chiles diced or chopped
  • 12 oz Tomato paste
  • 10 oz Rotel with lime and chiles or fire-roasted; not drained
  • 6 cups Tomato broth made from Knorr Caldo de Tomate
  • 1 cup Cheddar cheese shredded
  • Tortilla chips or tortilla strips

Instructions

  • In a large dutch oven or stock pot, sautee onions and bell peppers in olive oil for 3 minutes or until somewhat translucent.
  • To the same pot, add the shredded or chopped pre-cooked chicken and the spices. Stir together and cook for a minute or two.
  • Add all canned ingredients and water.
  • Add 6 teaspoons Knorr Caldo de Tomate to the water at the top of the pot. Set pot to medium high heat to boil.
  • Once soup reaches boiling point, turn down heat to low and simmer, uncovered, for 20 minutes.
  • Garnish with crushed tortilla chips or tortilla strips, sour cream, cilantro, and shredded cheese.

Notes

*If you need to cook your chicken at the start of this recipe, this is going to add some additional prep time to the recipe - plan for 5-10 additional minutes of prep. If you need to do this, you can chop the raw chicken breasts into small pieces and sautee the chicken along with the onions and peppers. You will likely need to add a bit more olive oil to the pan.
