Ingredients

  • 2 Mangoes
  • ¼ Red onion chopped
  • ½ Red pepper chopped
  • 1 Jalapeno de-seeded and chopped
  • 2 Limes juiced
  • 1 tsp Chili powder optional; can use more as desired

Instructions

  • Dice up mango, red onion, red pepper, and jalapeño.
  • In a large bowl mix together diced mango, red onion, red pepper, and jalapeño.
  • Cut 2 limes in half and squeeze juice over diced mixture.
  • Mix until everything is well incorporated, sprinkling in the optional chili powder at the end.
  • Serve with tortilla chips as a mango salsa or alongside tacos/quesadillas/burritos/meat.
  • Keep leftovers in an airtight container in the refrigerator for 2-5 days.
