English Muffin Breakfast Sandwich

This English Muffin breakfast sandwich will have you craving ham and egg sandwiches for breakfast often! With careful layering of ham, cheese, poached or fried egg, tomatoes and more, you can have the perfect English muffin sandwich!

Ingredients

  • 2 English muffins halved
  • ½ pound Deli ham divided
  • 2 slices Cheddar cheese
  • 1 Small tomato thinly sliced
  • 2 Eggs
  • 1 tablespoon Jalapeno sauce or other green hot sauce
  • 1 dash Salt
  • 1 dash Black Pepper
  • 1 teaspoon Parsley finely chopped (optional)

Instructions

  • Place 1/4 pound of ham onto bottom slices of English muffins.
  • Place one piece of cheese onto each layer of ham.
  • Fry or poach the two eggs to your desired doneness. (2 minutes yields a medium runny poached egg.)
  • While the eggs cook, heat your bottom slice with the ham and cheese in the microwave for 20 seconds or the air fryer for 1 ½ minutes or until cheese melts. (Hold cheese and ham in place with toothpicks). You can also heat the top slice but do not put on top of bottom stack.
  • Remove muffins halves from microwave/air fryer and add tomato slices to the top of the cheese.
  • Gently transfer egg from cooking pan to the top of the tomatoes.
  • Lightly season egg with salt and pepper.
  • Garnish egg layer with thinly sliced green onion or parsley. (Optional)
  • Smear a thin layer of jalapeno sauce onto top layer of bread.
  • Gently place top layer of muffin onto the sandwich stack.
