Orange Cake Bites with Powdered Sugar Glaze

This recipe for orange creamsicle cake bites makes more than 60 bite-size treats. This doctored cake mix recipe makes for a delicious orange sponge cake texture with these orange cake bites.

Ingredients

Orange Cake Batter

  • 1 box Orange Supreme Cake Mix Duncan Hines brand
  • 1 box Orange Jello Mix 3.5 ounce
  • 4 Eggs large
  • 1 ¼ cup Sour Cream
  • ½ cup Milk

Powdered Sugar Glaze

  • 4 cups Powdered Sugar (Confectioner's Sugar)
  • 3-4 tbsp Milk (possibly more)
  • 2 tbsp Orange Juice Optional

Instructions

Making Orange Cake Batter

  • Preheat oven to 325°.
  • Spray 3 mini muffin tins with Pam spray or Baker's Joy.
  • Combine and blend all cake batter ingredients in order as they are listed above.
  • Using a small cookie scoop that is about 3/4 full, fill the muffin tin wells.
  • Bake for 10-12 minutes or until muffins pull in slightly from edges and tops bounce to the touch.
  • Let hot pans rest for a few minutes before flipping them upside down onto wire racks. It is possible you will need to gently nudge some of the cakes from the wells.
  • Allow muffins to cool completely while you make the glaze.

Making Powdered Sugar Glaze

  • Place the wire racks and orange cake bites on top of cookie sheets lined with foil or wax paper.
  • In a medium-sized mixing bowl, mix confectioner's sugar with small amounts of milk until glaze seems thick enough to pour and not overly runny. It is possible you will need to add a little more milk.
  • Optional: add 2 tablespoons of orange juice alternately with the milk.
  • With a small cookie scoop, begin drizzling glaze over the cakes. Try to cover as many as you can with each drizzle. Repeat the process until all cakes have been drizzled over at least two times.
  • Allow glaze to set before serving cakes.
  • Store leftover cakes in the refrigerator in an air-tight container.
