Platanos Maduros - Fried Plantains
The fried plantains are the authentic platanos maduros of Panama. They are double-fried plantain slivers made from green plantain bananas. Maduros, also called tostones, are delicious served with a ketchup mayo sauce.

Fried Plantains
- 2 Plantain bananas ripe; black or dark
- 1 cup Oil
- 1 tsp Salt
Ketchup Mayo Sauce
- ½ cup Ketchup
- ½ cup Mayonnaise
Heat oil in a medium frying pan with a high rim.
Peel and slice plantain into diagonal slices, about 1/2 inch thick.
Fry 2-3 minutes on each side until edges are brown.
When both sides are evenly browned, remove slices with a slotted spoon or spatula and place on a plate lined with paper towels.
Sprinkle slices with salt, if desired.
Serve plantains with ketchup or with a ketchup mayo sauce.
