Easy Chicken and Sausage Jambalaya Recipe

This easy Louisiana jambalaya with chicken and smoked sausage is easy enough for weeknights but special enough for entertaining!

Ingredients

  • 2 cups Uncle Ben's CONVERTED Rice
  • 1 package Hillshire Farm Beef Sausage or andouille sliced into 1-inch rounds or half-moons
  • 2 cups cooked chicken breast chopped into bite-size pieces
  • 1 can French Onion Soup 10.5 oz
  • 1 can beef broth 14.5 oz
  • 1 can tomato sauce 8 oz
  • 1 bunch celery chopped
  • 1/2 bunch green onions chopped
  • 1/2 cup fresh parsley chopped
  • 1 tbsp thyme
  • 1 tbsp Creole seasoning
  • 2 whole bay leaves

Instructions

  • Preheat oven to 375 degrees. 
  • In a large bowl, mix all ingredients except for bay leaves. 
  • Carefully, pour all ingredients into a 9x13 casserole or baking dish.
  • Add the two bay leaves into the top of the jambalaya.
  • Cover dish with foil.
  • Cook for 55 minutes and remove foil. 
  • Cook for 5-10 more minutes without foil. Jambalaya should still look a little moist and not overly dry. Do not let the jambalaya become overly dry in the oven. 
  • Remove bay leaves . 
  • Serve with potato salad or French bread.
