Upon a recent visit to a popular brunch spot in Boston, I fell in love with the beef and sausage breakfast burgers on the menu.
My breakfast bagel burger was legit! (By name, it was called the hangover breakfast burger on the menu, and that proclamation didn’t disappoint either.) I knew right then and there that I had to try to recreate this beautiful and hearty breakfast cheeseburger at home.

Equipment You Will Need for Breakfast Burgers
This recipe is a little more involved. You will need a large and a small skillet (stainless steel or cast iron), a large and a small mixing bowl, a spatula, and a sharp knife.
How to Make Bagel Burgers for Breakfast
- Prepare your caramelized onions if you have not already.
- As the onions caramelize, combine the sausage, ground beef, maple syrup, salt, and pepper in a large bowl. Use a spoon or your hands to mix the ingredients until they are fully incorporated. Divide the mixture into equal sized patties.
- Cook the burger patties in a large skillet over medium heat until cooked all the way through. Before the burgers finish cooking, add the cheese so it can melt.
- In a small bowl, stir together the mayo, BBQ sauce, ketchup, mustard, worcestershire sauce, onion powder, garlic powder, salt, and pepper. Set aside.
- Fry the eggs until they have cooked to the desired level. Toast the bagels.
- Assemble the burgers by adding sauce to both sides of the bagels and placing caramelized onions on both sides of the bagel. Add the burger, bacon, egg, and tomato.
- Serve and enjoy!
How to Store and Serve Breakfast Burgers
Breakfast burgers are best served fresh, but if needed you can assemble and cook the patties the night before, and reheat them in the skillet while you’re making the eggs. Feel free to make extra sauce and store it in the refrigerator for up to a week to use on other sandwiches. We like serving our breakfast burgers with a side of hash browns and fruit salad.
This recipe prepares ½ pound burgers. If you’d prefer to make ¼ pound patties instead, just make sure you adjust the toppings as desired.
Frequently Asked Questions
How “done” should my eggs be?
Breakfast burgers typically have a runny yolk to them. However, if you’re the type who prefers a firm yolk go ahead! This is an easy part of the recipe to customize so you can have the exact burger you want.
Can I make the breakfast burgers ahead of time?
These patties make a great meal prep! We recommend assembling and cooking all at the same time, but if you absolutely need to prep ahead of time, we recommend reheating the patties while you cook the eggs the day you’re planning to eat them.
How can I tell when my eggs are done?
For fried eggs, you want the whites to solidify and set, but typically the yolks will be a little runny. It’s really up to you, though!
Expert Tips and Tricks
- If you want an extra depth of flavor, add a dash of liquid smoke to the patties or the sauce! A little goes a long way, but it can add a beautiful layer of flavor to your meal.
- If you don’t love the sweetness of caramelized onions, we recommend adding pickled red onion in its place. You’ll still get that onion flavor, just a bit more tart.
- If you like a little kick, add cayenne pepper to your sauce, and top with pepper jack cheese instead of white cheddar!
