Of course, if you are going for a low-carb diet, you might need to rethink the rice, peas and any other ingredient you choose as rice is high in carbs, and peas are considered higher in carbs also since they are in the beans/legumes category.

Stuffed Taco Peppers
Ingredients
- ½ lb Ground beef
- 2 cups Rice *cooked/prepared
- 1½ tbsp Taco seasoning
- 1 cup Cheddar cheese shredded
- 1 tbsp Tomato sauce reduced or no sugar added
- 1 Tomato diced
- ½ cup Green peas *canned
- 3 Bell peppers long and skinny
- 1 tbsp Olive oil
- 2 tbs Cilantro chopped
Instructions
- Preheat oven to 375℉.
- In medium skillet, brown ground beef and drain.
- Mix cooked rice into beef mixture.
- Stir in taco seasoning, cheese, tomato sauce, and green peas.
- Slice bell peppers lengthwise, scooping out seeds.
- Clean and dry bell peppers.
- Scoop filling evenly into the six bell pepper halves.
- Top the bell pepper tacos with the diced tomatoes (you may need to gently press into the top).
- Sprinkle each taco with a bit of olive oil.
