Expert Tips for Stuffed Taco Tomatoes
- Choose ripe tomatoes: It’s important to select ripe tomatoes for taco shells. Ripe tomatoes have a softer texture and are easier to scoop out. Look for tomatoes that are firm but still give a bit when squeezed with your fingers.
- Slice the tops off: Slice off the top of each tomato to create a flat surface. This will help the tomatoes stand upright and prevent them from rolling over while baking.
- Scoop out the seeds: Use a spoon to scoop out the seeds and pulp from the inside of the tomatoes. Be gentle so that you don’t damage the tomato shells.
- Season the shells: Drizzle the inside of each tomato shell with a little olive oil and sprinkle with some salt and pepper. This will add flavor to the shells and help them hold their shape while baking.

- Add toppings: Top the taco stuffed tomatoes with your favorite toppings such as shredded lettuce, diced avocado, chopped green onions, and chopped cilantro.
- Serve immediately: Tomato tacos in tomato shells are best served immediately while the shells are still warm and slightly crisp.
Stuffed Taco Tomatoes
Ingredients
- 1 lb Ground beef
- ½ cup Onion chopped
- 4 tbsp Taco seasoning
- 4 Tomatoes large
- 4 tbsp Sour cream
- ½ cup Cheese shredded
Instructions
- In medium skillet, brown ground beef with onions.
- Stir in taco seasoning.
- Cut the tomatoes across the top in a flat cut, removing the top completely. Then, add eight vertical slits all around each tomato, from top down – going at least halfway – no more than 2/3s way – down the tomato from top to bottom. (See photos.)
- Fill tomatoes – going most of the way up – with cooked taco meat (or any other fillings of your choice).
- Top with one tablespoon of sour cream and shredded cheese.
- Add chopped green onions or cilantro.
- Serve warm.
