Ingredients
- Mixed greens – a good mix of arugula and spinach leaves
- Roma tomatoes – sliced into four pieces vertically (You can also use a handful of cherry tomatoes, sliced in half.)
- Cucumber – peeled and sliced
- Avocado – pitted, scooped from the shell, and cut into thin slices
- Feta cheese
- Olive oil
- Lemon juice
- Garlic powder
- Oregano
- Salt
- Pepper

Spinach and arugula are two leafy greens that complement each other perfectly in a salad. Spinach has a mild, slightly sweet flavor and a tender texture, while arugula has a peppery, slightly bitter taste and a firmer texture. When combined, the two greens create a well-balanced flavor profile that is both savory and refreshing.
The sweetness of the spinach helps to balance out the bitterness of the arugula, while the firm texture of the arugula adds a satisfying crunch to the salad. How to Make Spinach Arugula Salad with Avocado and Feta
This salad is a show-stopper as long as you set up the plate properly. You will basically make a pattern with the ingredients to bring out the pretty design.
You will start by peeling and slicing the cucumbers. Next, you will slice the cherry tomatoes into four slices each – slicing them vertically. Afterward, you will need to pit the avocado and remove the skin. Slice the avocado into thin pieces.
Mix the dressing ingredients together in a small bowl – the olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Set aside while you arrange the salad on the platter.
Pull just a few salad leaves aside for decorating the finished salad. Place the majority of the salad leaves on a large plate – in the center. Toward the outer edge of the platter (over the greens) line the avocado slices and cucumber slices in a pattern.
In the center of the salad leaves, place the sliced tomato. Around the outer edge of the salad leaves, sprinkle Feta cheese.
Start tucking in a few of the extra leaves you set aside in an arrangement of your choice.
Just before serving, drizzle the salad dressing over the salad.

What to Serve with this Spinach and Arugula Salad
I like to serve this salad alone as a main course at lunch. However, at dinner, I often serve this salad as as a side course to a grilled meat or to a pasta. It always get rave reviews!
Amazing Spinach Arugula Salad with Avocado and Tomato
Ingredients
- 4 cups Mixed greens primarily of arugula and spinach leaves
- 3 Roma tomatoes
- 1 Cucumber
- 1 Avocado
- ½ cup Feta cheese
- 2 tbsp Olive oil
- 1½ tbsp Lemon juice
- ½ tsp Garlic powder
- ½ tsp Oregano
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- Peel cucumber and slice into medium cubes.
- Remove the pit and skin from the avocado. Slice into thin slices.
- Set aside a few arugula leaves for decoration at the end. Place the rest of the spring mix on a serving plate.
- Arrange cucumbers and avocado around the outer rim of the plate in a pattern.
- Slice tomatoes cut into 4-6 pieces vertically and place in the center of the dish.
- Sprinkle the salad with crumbled feta cheese in a circular pattern toward the outer edge.
- Tuck in a few of the reserved salad leaves in a pattern of your choice for an added layer of green near the top.
To Make Lemon Dressing
- In a small bowl, whisk together olive oil, lemon juice, garlic, dried oregano, salt and pepper until smooth.
- Drizzle dressing over salad just prior to serving.
