One enjoyable thing about the onset of summer is that I have more excuses to make this sausage and squash skillet meal. Of course, who doesn’t need a good yellow squash recipe in the summer? It is a family favorite that can be made any month of the year but is best with fresh-from-the-farm yellow squash.
I’ve really been enlightened to the many benefits of supporting our local farmers and so this dish brings me reason for more visits to our farmers’ markets or at least to shop the “Arkansas Grown” section of our local supermarkets.
Option 1: Sausage and Squash Skillet with Orzo – Yellow Squash Recipe
To begin, you basically need four ingredients for this dish: a small box of orzo, beef sausage links, yellow squash, and a bottle of Italian dressing. It doesn’t get much easier than three ingredients, now does it?
Years ago, I found this sausage and squash one-pan dish in an issue of Taste of Home. Since then, I have been making this on the regular, throwing a couple of slices of garlic bread onto the plate with it. The recipe even come in handy a few times for new-baby dinners for friends.
Aside from having your own kitchen staff, is there anything better really than a one-pot meal?
But this summer, I decided to add some orzo to the mix because…well, why not?
Luckily, we found we really like it this way, too!
However, if you aren’t a fan of using pasta, you can totally make this yellow squash recipe with just the sausage, the squash, and the Italian dressing. Follow the recipe below and just omit the part for the orzo.
Option 2: Sausage and Yellow Squash Skillet without Orzo
This dish is just as enjoyable served over rice or with other veggies on the side. Just skip the orzo altogether and reduce the Italian dressing and only use around 3/4 cup Italian dressing in total.
Sausage and Squash One-Pan Meal
Ingredients
- 1 box of orzo 12 oz package
- 1 package of beef sausage links sliced into bite-size pieces (I prefer Hillshire Farm)
- 3 small to medium yellow squash sliced into bite-size pieces
- 1.5 cups Italian dressing adjusted to taste
- Salt and pepper to taste
Instructions
- In a medium saucepan, cook orzo in boiling water, following package directions.
- In a large skillet, add the sausage and cook until both sides are browned.
- Add the summer squash and 1 cup of Italian dressing and stir.
- Add salt and pepper to taste.
- Cover with lid and set to simmer for about 10 minutes or so, stirring once or twice.
- When squash is soft and has a sauteed texture, add the drained orzo and a bit more dressing, if needed, to ensure sausage, squash, and pasta is all coated.
- Cover and cook for five minutes longer.
- Serve with bread or a side salad.
Notes
The Italian dressing gives a tangy edge to this meat and veggie dish. Now, if you don’t care for a strong Italian dressing taste, you may want to cut down on the dressing.
