Ingredients for Frankenstein Cupcakes (Chocolate Cupcakes with Green Icing)
For the cupcakes:
- 1 box chocolate cake mix (I like to use Devil’s Food mix.)
- 1 package chocolate instant pudding mix
- 1 cup sour cream
- 4 eggs
- 1 cup oil
- 1/2 cup warm water
For the frosting:
- 1 cup unsalted butter, softened
- 1 teaspoon salt
- 1 teaspoon vanilla
- 3-4 tablespoon milk
- 4 cup powdered sugar
- Green food coloring
To decorate:
- ½ cup chocolate chips
- Chocolate jimmy sprinkles
- Candy eyeballs
Tips for Making Frankenstein Cupcakes with Chocolate Cupcakes and Green Icing
- We used pastry bags to help frost the cupcakes. They can be found at most grocery stores, hobby stores, kitchen stores, and online. A Ziploc with a small hole cut in the end works here as well.
- Create a tall mound of frosting on each cupcake – it will compress a bit once dipped in the chocolate sprinkles. Don’t be stingy with the frosting. If you don’t have enough icing or have enough height, the eye balls and chocolate chip bolts will appear disproportionate and awkward.
- For the chocolate chips, the wide ones are best because they make for slightly larger ears.
- Edible candy googley eyes are pretty easily found in most bakery aisles of grocery stores. Should you have trouble finding some and you are feeling extra productive, you might consider making your own homemade googley candy eyes.
- Cupcakes can be stored in an airtight container in the fridge for up to 3 days or frozen for 3 months. If you are storing the cupcakes already frosted, you need to be super careful with how you store them so the presentation is not disturbed. The condensation from the container may start to dissolve the eye ball candies – if desired, place those on just before serving. Personally, I recommend freezing the cupcakes with no icing and then wait to ice and decorate them after the cupcakes are thawed.
Shortcut Idea: Make Frankenstein Cupcakes with Pre-Made Chocolate Cupcakes from the Bakery
If you’re short on time or simply don’t enjoy baking, don’t worry! You can still make these Frankenstein cupcakes using store-bought chocolate cupcakes and green icing. Simply pick up your favorite brand of unfrosted chocolate cupcakes from the store bakery. (It’s possible you can call ahead to your Walmart bakery or other store bakery and ask if they can make you a certain number of unfrosted cupcakes by special order. Then head to the baking aisle to grab some green icing. You can also opt for white icing and add green food coloring to achieve the desired shade.
Once you have your cupcakes and icing, the rest of the process is just as easy as if you had baked the cupcakes from scratch. Follow the same steps for decorating the cupcakes with the green icing, jimmies, and black decorating gel to create Frankenstein’s iconic facial features. Your guests will still be impressed by these adorable and spooky treats, and you’ll save yourself some time in the process.
Frankenstein Cupcakes (Chocolate Cupcakes with Green Icing)
Ingredients
Chocolate Cupcakes
- 15 oz Chocolate cake mix
- 5.9 oz Instant chocolate pudding mix
- 4 Eggs
- 1 cup Sour cream
- 1 cup Vegetable oil
- ½ cup Water slightly warm
Green Buttercream Frosting
- 1 cup Unsalted butter softened
- 1 tsp Salt
- 1 tsp Vanilla
- 4 tbsp Milk possibly may not need all 4 tablespoons
- 4 cup Powdered Sugar
- Green food coloring
Frankenstein Embellishments
- ½ cup Chocolate chips
- 2 cups Jimmy sprinkles
- 48 Googley eye candy
Instructions
To Make Chocolate Cupcakes
- Preheat the oven to 350 degrees and prep your cupcake pans by placing the liners in each cavity. Set aside.
- In the bowl of a stand mixer, combine the cake mix, eggs, oil and water. Mix on low speed for about a minute and then bump up the speed to medium for an additional minute. Mixture should be smooth with only a few occasional small clumps.
- Divide equally among the cupcake liners – fill each one about ½-⅔ full. You can use a measuring cup to help scoop and portion out the batter.
- Bake in the preheated oven for approximately 14-16 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Allow to cool for at least 30 minutes or until no longer warm to the touch before decorating.
To Make Green Buttercream Frosting
- To make the frosting: in the bowl of a stand mixer, combine the softened butter, vanilla and salt. Cream until smooth.
- Add in half of the powdered sugar and mix on low speed until combined.
- Add in the remaining powdered sugar and about 2 tablespoons worth of the milk. Mix until combined. If the mixture appears too dry, add the remaining milk. If the mixture has incorporated, do not add any more milk – you want it to be a stiff consistency, but not dry-looking.
- Add in your green food coloring and bump up the speed to medium and mix for an additional minute to fluff up the frosting and ensure that it is smooth and well mixed. Scrape down the sides and mix again. Add additional food coloring until desired shade of green is achieved.
To Decorate Frankenstein Cupcakes
- Transfer the frosting to a pastry bag fitted with a large round tip (or a Ziploc with a hole cut in the end. Prepare all your decorations. Have the candy eye balls and chocolate chips accessible. Place the chocolate sprinkles in a large shallow bowl or plate.
- Once the cupcakes are cool, pipe a large mound of frosting on each cupcake. Use a butter knife or offset spatula to smooth the sides. Carefully invert the cupcake and gently press into the chocolate sprinkles just until they stick. Correct the cupcake and set aside while you repeat with the remaining cupcakes.
- Insert the candy eye balls toward the front of the cupcake, in the green frosting to be viewed from the side.
- Using two chocolate chips, insert the pointy end into opposite sides of the cupcake on either side of the eye balls.
- Transfer carefully to a serving platter for a frightful but cute presentation!
