If you know me, you know I’m always ready for a fiesta! With Cinco de Mayo here, you might be looking for a fun new fiesta-worthy appetizer to wow your family and friends with. And, luckily for you, I’m here today to share our mouth-watering fiesta guacamole wonton cups! These wonton taco cups are fun to eat and to serve!
What are Wonton Wrappers?
For the most part, wontons are known as a staple in Chinese cuisine. However, over the last decade or two, dough-based wonton wrappers have been slipping into recipes for hand-held party food.
The square shapes of thin dough are a perfect size for wrapping or folding in fillings. Whether fried or oven-baked, the small sized wrappers make a perfect base for individual-sized party food.
Ingredients for Guacamole Wonton Cups
The filling and topping are easy to customize in these fiesta guacamole wonton cups. For the toppings, you may not care to have everything listed. Go as simple or as “loaded” as you would like!
- 1 pound ground beef
- 1 bell pepper (red, orange, or green) – diced
- 1 packet taco seasoning mix
- 8 ounces tomato sauce
- 1 cup refried beans
- 2 cups shredded cheese
- ¼ cups green onion, slivered
- ½ cup cherry tomatoes, chopped
- ½ cup black olives
- ¼ cup salsa or pico de gallo
- ½ cup guacamole
- 24 wonton wrappers (We use Nasoya usually. But you can use any brand or make homemade wonton wrappers.)
I add about ½ cup guacamole on the top of the guacamole wonton cups. But I also often place a cute bowl with extra prepared guacamole – sometimes fresh and other times store bought – for people to add more if they wish or to use as a dip for chips.
Layering the Wonton Wrappers
For this recipe, I use a standard muffin pan. Working with the wonton wrappers is as easy as removing them from the package and placing them inside the wells of a greased muffin pan.
In this recipe, layering the wontons in a criss-cross pattern helps to provide a shell that overlaps and rises all the way around these fiesta guacamole wonton cups.
Adding the Filling and Toppings to Fiesta Guacamole Wonton Cups
Once I layer the first wonton wrapper into each cup of the muffin pan, I add a base of refried beans. After the beans, I add a second wonton wrapper. A spoonful of taco meat is layered next. Then, I toss a scattering of lettuce, tomato, shredded cheese, and olives.
We like to add green onions on ours.
Then, we scoop on a spoonful of guacamole since these are guacamole wonton taco cups, of course!
And we never, ever forget the cheese! We like to use freshly grated when possible, but we have no problem reaching for a bag of pre-shredded cheese either!
We like to use a combination of asiago and cheddar or a fiesta blend.
These wonton appetizers are so darn good! The edges are crispy and the insides are loaded with cheesy guacamole goodness!
Delicious Guacamole Wonton Taco Cups
Ingredients
- 1 lb Ground beef
- ½ Bell pepper diced (can use any color)
- 1 oz Taco seasoning
- 8 oz Tomato sauce
- 24 Wonton wrappers
- 1 cup Refried beans
- 2 cups Shredded cheese divided
- ¼ cup Green onion chopped
- ½ cup Guacamole
- ½ cup Black olives
Instructions
- In a medium skillet, brown the ground beef with the diced bell pepper. Strain meat and return to pan.
- Spray a 12-tin muffin pan with cooking spray.
- Lay one wonton wrapper in the bottom of each muffin tin.
- Add one tablespoon of refried beans on top of each wrapper.
- Criss-cross a second wonton wrapper over the beans.
- Top the second wrapper with one tablespoon of taco meat.
- Sprinkle the meat with 1/2 the shredded cheese.
- Bake for 12-15 minutes at 350 degrees. (Edges should look crispy and slightly browned.)
- Remove from the oven and place wonton cups on a serving tray, allowing to cool slightly.
- Add other toppings as desired – adding plenty of guacamole, tomatoes or olives, and extra shredded cheese! Optionally, you can shredded lettuce, cilantro, and salsa.
