If you want a cookie to impress, you have come to the right place with these white chocolate chip and almond oatmeal cookies. Several months ago, the Hubs picked up some delicious oatmeal cookies from a special bakery he visited during a work trip. The man knows when he leaves me with these children for a week, he better show back up with something g-o-o-o-d!
As I ate my delicious round of sugary goodness, I considered the flavors. I decided this was a cookie I must try to recreate on my own. And that was when the recipe for these white chocolate chip and almond oatmeal cookies was born. I used my basic oatmeal cookie recipe as the base and just guessed my way through the ratios for the white chocolate and the almonds. I prefer to use Quaker Old-Fashioned Oats in most of my oat recipes.
While Little One was at the store with the Hubs, Scooter Britches and I got busy in the kitchen a few days ago. We made several different versions of oatmeal cookies all in that one afternoon. SB was darling as she ran to the pantry to start pulling ingredients. She knew right away to grab the flour, the sugar, the eggs, and the white chocolate chips.
I’m always proud of my little chef. She is little miss independent in the kitchen. Yet, she knows that we have to follow certain steps with accuracy. Granted, she has already picked up that some ingredients…ahem, vanilla…aren’t meant to be measured with accuracy.

Sometimes, I wonder which of our recipes the girls will remember and bake for their own families when they are grown. If they are smart, one of those recipes will be for these white chocolate chip and almond oatmeal cookies! These cookies are just that good!
And then there is the sea salt.

Don’t forget it.
That slight taste of salty against the rich sweet flavor is killer!
SB gave the cookies a thumbs up, which was pretty cute since I had never seen her give a thumbs up before!
While the cookies were cooling, a certain little someone returned from the store. She gave the biggest puppy dog eyes you’ve ever seen while begging for a cookie.

White Chocolate Chip and Almond Oatmeal Cookies – Cooking with Kids
Ingredients
- 2 sticks unsalted butter
- 1 cup white sugar
- 1 cup light brown sugar
- 2 eggs
- 1 1/2 tbsp vanilla
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 1/2 tbsp cinnamon
- 3 cups oatmeal
- 1/2 cup slivered almonds
- 1 1/2 cup white chocolate chips
- Sea salt for sprinkling
Instructions
- Preheat oven to 350 degrees.
- Cream butter and sugars in a large mixing bowl.
- Add eggs and vanillla and beat until mixture appears uniform.
- Add flour, baking powder, salt, and cinnamon. Mix well.
- Add oatmeal, almonds, and white chocolate chips. Mix until combined.
- Using a medium cookie scoop, scoop dough onto greased cookie sheets. Bake for 10-12 minutes or until bottoms appear slightly browned.
- Sprinkle immediately with sea salt, careful not to add too much.
- Move cookies to wire racks to cool completely.

I loved the flavor but, not sure what or if I I did something wrong (I followed the recipe to a T) bur my cookies were very difficult to get off the pan. I tried taking them off hot, which worked about the best, but they just wanted to crumble. Letting them cool a bit did not work at all. Very disappointed in that. Wanted to add a picture but don’t seem to have the capability.

Oh, no! I hate to hear that, Cindy! I can’t say I have ever had the issue of the cookies crumbling during when removing them from the pan. They usually lift up pretty easily – similar to typical oatmeal cookies. I wish I had some ideas on why that would have happened. It would seem they should have especially lifted easily after cooling a bit.
