Of course, if you just prefer yellow squash or only have zucchini on hand, you can still use this recipe with only one vegetable.

Making Oven Baked Zucchini and Squash in Foil Packets
Home cooks have been putting squash and zucchini foil packets in ovens for years and years. There’s a reason this method has stuck around. It’s easy and so good! And, for the most part, it’s healthy, too!
In this particular recipe, we put all the zucchini and squash slices in one large foil packet, although you can certainly make individual packets if you wish. Making one large pack is faster than individually packing smaller servings, but there are times when the individual small foil packets come in handy – like when camping.
Grilling Squash and Zucchini on Grill in Foil
In the summer (or year-round if you are lucky like that), you can enjoy the method of grilling squash and zucchini on grill in foil. The preparation to grill zucchini and squash in foil is the same as for oven baked zucchini and squash in foil described above.
Seasoning for Grilled Zucchini and Squash
As I mentioned in the ingredients section above, you can use Slap Ya Mama or Tony Chachere’s or another favorite bold seasoning of your own.
We love Slap Ya Mama and Tony Chachere’s. We use them both often. They both offer a big kick so you have to be careful to not overdo it.
In the past, I have been disappointed by trying some new spices at the store, deciding I like them, and then discovering they have been discontinued a short time later. I feel better knowing my recipes include spices that will be around when I need them, and especially when posting recipes here on the blog for readers to try.
Grilled Zucchini and Squash in Foil Packet
Ingredients
- 2 Zucchini
- 2 Yellow squash
- ⅛ cup Onion chopped (Optional)
- 1 tbsp Creole seasoning Slap Ya Mama is our favorite. Tony Chachere is another good one.
- 3 tbsp Butter Sliced into 6 pats of butter
- 1 tbsp Parsley chopped
- ⅙ cup Parmesan shredded or grated (Optional)
Instructions
Preparing Zucchini and Squash in Foil
- Chop zucchini and squash into 1/4 inch disks. Chop onion (if using) and add all vegetables to medium mixing bowl.
- Sprinkle seasoning over vegetables in bowl and toss to coat veggies evenly.
- Spread vegetables on one large sheet of foil. (Foil must be large enough to fold back over the top of the vegetables and seal well around the three open edges. If this is not possible, you can always place a second sheet on top of the vegetables and very carefully seal up all the sides.)
- Spread around 6 pats of butter over the top of the vegetables.
- Seal the foil packet.
Grilling Zucchini and Squash in Foil
- Place packets on the top rack over medium heat on a gas or charcoal grill for 15 -20 minutes, flipping once. Vegetables should receive indirect heat. Keep sides of grill rack pulled up to retain heat. (You can grill meat on the lower rack at the same time, if desired. If you need to crank the heat up, the vegetables will not need as much cook time. Reduce by 2-3 minutes. If you are reducing the heat, you may need to add a few minutes cook time.)
Making Oven Baked Zucchini and Squash in Foil (Alternate Method)
- Place large foil packet in a single line on an ungreased cookie sheet with rims. Bake for 25 minutes in a pre-heated 375 oven. Zucchini and squash should be mostly soft and tender.
- When serving the vegetables from the grill or the oven, be careful while opening as steam will be intense and corn will be hot.
