- ½ lb Ground beef
- ¼ Onion chopped
- 2 tsp Garlic minced
- 1 tsp Black pepper
- 1 tsp Salt
- 5 Dill pickles large
- 2 oz Cream cheese
- ½ cup Cheddar cheese shredded
- ½ tbsp BBQ rub or other spice of your choice
In a medium skillet, brown the ground beef with the onion and garlic.
While meat is browning, deseed and hollow out the pickle halves.
Drain the cooked meat, and add salt and pepper.
Place the hot meat mixture in a mixing bowl with the garlic, cream cheese and cheddar cheese. Stir to combine well.
Stuff the pickle halves with the meat mixture.
Wrap a slice of bacon around the pickles, and place them seam side down on a parchment lined baking sheet.
Sprinkle the pickle poppers with BBQ rub seasoning or other spice of your choice.
Bake for 15-20 minutes, or until the bacon is done to your liking.
