Kielbasa Sheet Pan with Potatoes and Peppers

- 14 oz Kielbasa cut into rounds
- 2 lbs Yukon Gold potatoes washed and chopped into 1/2 inch cubes (peeling on or off)
- ½ Green bell pepper Seeded and chopped into 1/2 inch pieces
- ½ Red bell pepper Seeded and chopped into 1/2 inch pieces
- ½ Orange bell pepper Seeded and chopped into 1/2 inch pieces
- ½ Yellow bell pepper Seeded and chopped into 1/2 inch pieces
- 2 tbsp Olive oil
- 1 tsp Paprika Or other favorite spice
- 1 tsp Salt
- 1 tsp Black pepper
Preheat the oven to 400F.
On a large sheet pan, toss the kielbasa rounds, ½-inch cubed potatoes, and the chopped bell peppers with the olive oil. Spread the ingredients out in an even layer on the sheet pan with the kielbasa together in the center, the potatoes on one end, and the bell peppers on the other end of the sheet pan.
Sprinkle the potatoes and bell peppers with the paprika, salt, and pepper.
Bake at 400℉ for 20 minutes. Turn the kielbasa and continue baking until the potatoes are cooked through and the sausage is golden brown, about 5-10 more minutes.
Remove the pan from the oven and serve the kielbasa sheet pan dinner hot. You can serve it alone or over a hot bed of rice.
