Blueberry Granola Crisp

This amazing blueberry crisp with granola is so simple to make and will wow your guests - especially with tangy fresh blueberries and crunchy cinnamon granola!

Ingredients

Granola Topping

  • 4 tbsp Unsalted butter
  • ½ cup Brown sugar
  • 2 cups Granola

Blueberry Filling

  • 3 cups Blueberries
  • 1 tsp Cornstarch
  • 4 tbsp Brown sugar
  • 2 tbsp Lemon juice

Instructions

Making Granola Topping

  • In a medium saucepan, combine unsalted butter and brown sugar - until butter is melted and all is combined.
  • Add granola and stir until all the granola is coated with the melted butter mixture.

Make Blueberry Filling

  • Preheat oven to 350℉.
  • In a separate saucepan, add blueberries, cornstarch, brown sugar, and lemon juice. Stir until all is combined evenly.
  • Over medium heat, cook blueberry mixture for 5 minutes. Stir every minute or so to prevent sticking. The blueberries should be softened and the sauce thickened.
  • Transfer to a 9x9 baking dish. Spread the cooked granola mixture evenly on top of the blueberries.
  • Bake in the oven for 15-20 minutes. Blueberries should be bubbling around the granola crust.
  • Remove and let cool for 5-7 minutes. Serve warm with ice cream.
