Air Fryer Zucchini Fries with Parmesan
These parmesan air fryer zucchini fries are so simple to make. They are a bit healthier than traditional fried zucchini in breadcrumbs breading.

- 2 Zucchini
- 1 cup Panko breadcrumbs
- ¼ cup Parmesan shredded
- 1 tsp Salt
- ½ tsp Black pepper
- ½ tsp Cayenne pepper
- 2 Eggs beaten
- ¼ cup All purpose flour
- Cooking spray
Preheat the air fryer to 375 degrees.
Slice the zucchini in half lengthwise. Then, slice each half into six pieces lengthwise (to resemble French fries).
Combine the bread crumbs, Parmesan cheese, and spices.
Dip the zucchini into the beaten eggs.
Roll in flour and then re-dip in the eggs a second time.
Coat with breadcrumbs mixture.
Place the breaded zucchini onto the air fryer basket, careful not to overcrowd.
Lightly spray with cooking spray.
Air fry for 9-10 minutes or until the zucchini fries are golden brown.
Serve warm with ranch dressing.
