Ingredients

  • 1 lb Asparagus
  • 2 Eggs beaten
  • ¼ cup All purpose flour
  • 1 cup Panko breadcrumbs
  • 1 tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Cayenne pepper

Instructions

  • Preheat air fryer to 375°.
  • Set out three shallow bowls or rimmed plates - one with beaten eggs, one with flour, and one with breadcrumbs/spices mixed together.
  • Trim 1 1/2 to 2 inches off the woody part of the asparagus stalks.
  • Dip the asparagus into the beaten eggs.
  • Roll the asparagus in flour.
  • Dip back into the eggs a second time.
  • Roll in the breadcrumbs/seasoning mix.
  • Place the coated asparagus in the air fryer basket, careful to not overcrowd.
  • Lightly spray with cooking spray.
  • Cook for 9-10 minutes, shaking once during the middle of cook time. Remove when asparagus is nicely brown and crispy.
  • Serve hot with ranch dip.
