Strawberry Waffles

These easy homemade strawberry waffles can be topped with syrup, strawberry sauce, powdered sugar, or fresh berries.

Ingredients

Strawberry Waffles

  • 6 cups All purpose flour
  • ½ cup Granulated sugar
  • ¼ cup Baking powder
  • 1 tsp Baking soda
  • tsp Salt
  • cups Milk
  • 1 cup Vegetable oil plus two tablespoons
  • 4 Eggs lightly beaten
  • 2 cups Strawberries fresh and chopped*

Easy Strawberry Sauce (Optional)

  • 2 cups Strawberries roughly chopped (about one pound)
  • ¼ cup Granulated sugar
  • 1 tbsp Lemon juice
  • 1 tbsp Cornstarch
  • 3 tbsp Water cold

Instructions

To Make Strawberry Waffles

  • In mixing bowl, combine all dry ingredients.
  • Add all wet ingredients to bowl.
  • Mix until smooth and well-blended.
  • Add chopped strawberries and mix again for 20-30 seconds.
  • Preheat waffle maker.
  • Once the waffle maker is adequately heated, add batter to the center of the lower grid. (You can use a measuring cup to do this, filling a bit at the time until the grid is filled evenly. Do not overfill the grids as batter may run over the edges. If you start with center first and spread batter outward with a spatula, you will reduce the chance of the batter running over the sides as waffles cook.)
  • As you remove each group of cooked waffles from the machine, you may place them on a baking pan in a 300 degree oven while the rest of the waffles cook. This will keep them warm.
  • Garnish with the optional strawberry sauce and Cool Whip. Or use syrup, powdered sugar, and fresh fruit.

To Make Quick Strawberry Sauce (Optional)

  • In a medium saucepan, add chopped strawberries and lemon juice.
  • In a small glass, whisk cornstarch into cold water.
  • Pour cornstarch mixture into pan with strawberries.
  • Cook for five minutes until strawberries have cooked down somewhat and mixture seems thickened.
  • Serve warm or cold over waffles.

Notes

*You can use frozen strawberries in the waffles. But you need to thaw them and pat them dry before adding them to the waffle batter.
