This warm spicy queso dip is exactly what you need for your next party. This customizable dip is perfect for meat add ins. We make ours into a pulled pork queso by adding in a bit of shredded pork, a bit of browned sausage, ground beef, or diced chicken. it is cheesy goodness for occasion!

What to Serve with Spicy Queso Dip with Meat
Because this spicy queso dip has such spice, a pita or chip that has more of a bland flavor works well. However, I have served this dip with Fritos and Tostitos, and no one seemed to mind those combinations.
Crusty bread pieces and sliced bell peppers or other veggies are also nice choices.
What Kind of Meat for Spicy Queso Dip?
We often make pulled pork queso because pulled pork is often abundant in our freezer since the Hubs smokes pork butts pretty regularly. But we have used browned sausage and browned ground beef, and all have been delicious. We have not tried shredded chicken yet, though I see no reason why chicken wouldn’t make a great meat for spicy queso dip.
Expect Heat with This Taquera Salsa Recipe
When choosing the salsa for this spicy cheese dip, you can go as mild or as hot as you want. We use the La Costena Taquera Salsa which has quite a spicy kick. I am suggesting starting with 1/2 cup and then adding more salsa if you think it needs more spice. You can taste-test as you go.
This taquera salsa recipe gives me a sweaty upper lip which is always a sign that something is truly spicy…haha! You can always go with a milder salsa that you know is your preferred spice level.
Expect a Really Thick Spicy Cheese Dip With Lots of Cheese Stretch
If you don’t like thick queso, this may not be the dip for you. This isn’t one of those watery dips where you dunk a chip and then the cheese just drips off. This is chunky, thick spicy queso dip. I suggest adding a second can of Rotel (undrained) to thin the dip a little if you do want it a bit thinner.
Because of the Oaxaca cheese used in this pulled pork queso, this is a super stretchy, stringy type of chip dip. When you dip the chip into the spicy cheese queso, you will get some cheese stretch with the chip. If you prefer more of a Velveeta and Rotel cheese dip type of consistency (no cheese stretch), this is not that.
Can I Make a Slow Cooker Queso?
This pulled pork queso is a tad more complicated because it does need to be served warm. Luckily, you can make this spicy queso as a slow cooker queso.
You can make this easy dip in the slow cooker. Simply layer all the ingredients into the bottom of your slow cooker. Set on low for one and a half hours. Occasionally, stir the mixture to ensure the cheese is not burning along the sides of the slow cooker.
Much like when making most any cheese dip in a slow cooker, a slow cooker liner can help with clean up.
Spicy Queso Dip with Meat
Ingredients
- 12 oz Sour cream
- 8 oz Cream cheese
- 8 oz Colby Jack cheese shredded; or substitute shredded cheddar – about 2 cups
- 8 oz Oaxaca cheese grated or sliced into small pieces for easy melting
- ½ cup Salsa as spicy as you wish; we use La Costena Taquera Salsa which is quite hot
- 10 oz Rotel undrained
- 2 cups Pork cooked and shredded with no sauce; *can also use cooked ground beef or sausage, or cooked chicken (diced)
Instructions
Stove Top Spicy Queso Dip with Meat
- In medium saucepan or deep skillet on medium heat, add all ingredients in order as listed.
- Stir regularly.
- Once cheese is melted (usually under 10 minutes), remove pot from heat.
- Serve spicy queso dip with pita chips, tortilla chips, corn chips, or pepper slices.
Slow Cooker Green Chili Dip (Pulled Pork Cheese Dip)
- In slow cooker, stir in all ingredients, in order as listed.
- Heat on low for 1.5 hours or until cheese is melted and dip is gooey, stirring occasionally.
