I got tickled recently when I realized just how many posts over here feature link sausage. There is sausage and chicken jambalaya, black eyed peas soup, pastalaya, sausage and squash skillet, spicy shrimp soup, Crockpot red beans and rice, and white beans and rice.
I promise I actually do cook with other meats. But today you get another sausage post! There is just so much ease with cooking with link sausages. Typically, I cook with Hillshire Farm beef sausage links. However, you can just as easily use kielbasa sausage or any other type of sausage link you choose.
Recently, I saw someone on Facebook had shared a similar sausage and potato bake with green beans recipe. It wasn’t a blog post or website but someone’s own success in the kitchen on that night. I never saw the post again after seeing it that once, and I don’t know exactly how hers was prepared. But it seemed easy enough to attempt to recreate in my own kitchen. This super easy smoked sausage green beans and potato recipe is a new rotation favorite.
How to Season Smoked Sausage Potato Green Beans Bake
Truly, this potato and sausage bake can be seasoned with just about anything. You can use salt and pepper for a more simple flavor. If you like spice, you can use a spicy creole type seasoning, like I suggest in the recipe card below. Personally, I like the taste of 1.5 tablespoons of Slap Ya Mama seasoning although my girls do sometimes complain it’s a tad bit spicy. So 1 tablespoon is probably what I should stick with for my kids.
Speaking of kids, I go through the step of peeling the potatoes because my girls won’t touch a potato with a skin on. If not for this, I would totally leave the skins on and release myself of that extra step in this green beans and sausage potato bake!
Sausage Potato Green Beans Bake
Ingredients
- 1 package Hillshire Farm beef sausage Or any other link sausage of your choice; sliced into half-moons
- 4 Russet potatoes Russet; peeled and diced small
- 2 cans Green beans drained
- 1 tbsp Olive oil
- 1.5 tbsp Slap Ya Mama seasoning Or any creole seasoning of your choice. You may also simply use salt and pepper.
Instructions
- In a large bowl, add sliced sausage, peeled and diced potatoes, and drained green beans.
- Drizzle the olive oil over mixture.
- Sprinkle on seasoning and stir until all pieces of the mixture are slightly glistening with oil and appear evenly seasoned.
- Carefully spread mixture into a sheet pan with sides or into a 9×13 baking dish.
- Cover with foil.
- Bake for 400° for 40 minutes. (Optional: remove foil last 5-10 minutes of baking.) Check to ensure potatoes are soft.
- Serve over rice or alongside bread or salad.
