Here I am. Back at it with more recipes for that leftover pulled pork you have hanging out in your fridge or freezer. I think this is my third or fourth pulled pork recipe, thanks to all those pork butts the Hubs cooks up and freezes every month or so. Today, I bring a stove top pulled pork chili verde – basically, a quick salsa verde pork and beans. This is seriously the easiest leftover pulled pork chili recipe!
Making Pulled Pork Chili Verde with Leftover Pulled Pork
If you find yourself with a few cups of leftover pulled pork, this green pork chili recipe is for you!
You can use leftover pulled pork of any type – smoked pork, leftover slow cooker pulled pork, or with oven roasted pulled pork leftovers.
You add one-half tablespoon of cumin and one-half tablespoon of chili powder to the meat.
Other Ingredients for Green Chili Pork and Beans
You will also need a few cans of beans from the pantry. In my recipe card below, you will see I am using light red kidney beans and Great Northern beans. But I have used different beans – like garbanzo beans – in this recipe in the past, depending on what I have on hand.
Of course, for a good chili verde pork recipe, you also need a jar of salsa verde. That is a key ingredient to this tasty recipe!
Layering Everything in a Pot
All that is left in the process is to layer everything in a stockpot or large saucepan! Seriously, when I say easy, I mean easy! I just start with the canned beans and the pork and follow with everything else.
What to Serve with Pulled Pork Chili Verde
For a truly quick salsa verde pork chili, I simply serve mine with tortilla chips. I like to add a wedge of lime to the side of the bowl so people can squeeze in a bit of fresh lime juice as desired.
Pulled Pork Chili Verde for Stove
Ingredients
- 32 oz Kidney beans light red, drained
- 15.5 oz Great Northern beans drained
- 2 cups Pork pulled
- ½ cup Onion chopped
- ½ tbsp Cumin
- ½ tbsp Chili powder
- 16 oz Salsa Verde
- 1 cup Water
Instructions
- In a stock pot or large saucepan, add all ingredients in order as listed and stir.
- Bring to a boil.
- Turn the heat down to low and simmer for 25 minutes.
- Serve green pork chili with lime wedges and tortilla chips.

I saw that but it still calls for leftover pork. Any recipes for raw pork in the slow cooker?

Ahh…I think I misunderstood your first comment! Unfortunately, I don’t have any recipes for raw pork in the slow cooker here on the blog. However, I have cooked pork butt in the slow cooker with salsa verde in the past. I think you could easily cook a small pork butt (3 pounds or so) with 16 ounces of salsa verde on low for 8 hours. Then shred and use as desired. The leftovers would be perfect for this soup or you could even just remove some of the meat to save for later and make the soup immediately. Leave two cups or so of pork in the slow cooker and add the rest of the soup ingredients to the two cups of pork and the salsa verde. It will be great!
