Ingredients for No Bake Strawberry Cream Cheese Pie
- Prepared graham cracker crust (or ingredients for making one: graham cracker crumbs, melted butter, and granulated sugar)
- Cream cheese
- Powdered sugar
- Lemon extract or vanilla
- Cool Whip
- Fresh strawberries
- Granulated sugar

- Lemon juice

A crust can make or break a pie, right? Why serve a pre-made graham cracker crust when making one from scratch is so easy and affordable? We keep boxes of the Keebler graham cracker crumbs so I can whip up my own crust whenever the whim hits.
Personally, I love how thick the homemade graham cracker crusts are. That crust-to-filling ratio is super important! Of course, if you are short on time, the store-bought graham cracker crusts will do just fine!
Make Homemade Graham Cracker Crust
- I mix the crumbs and sugar in a medium sized bowl before pouring in the melted butter.
- Once the concoction is thoroughly blended, I pat the crumbs down, as evenly as possible, into a pie plate.
- The pie plate goes into a 350 degree oven for about 8 minutes. Then, I set it on the stove top to cool and set while I make the filling.
Make a No Bake Strawberry Cream Cheese Pie Topping and Filling
This pie has two basic steps – as long as you already have your crust prepared. If you need to make a graham cracker crust, then consider this recipe to have three steps.
Make Strawberry Topping
- In a saucepan, I add 2 cups of fresh strawberries (sliced), granulated sugar, cornstarch, and lemon juice. I stir constantly over medium-low heat.
- Once mixture has thickened, I move the heat up to medium-high and bring to a boil, stirring constantly for about one more minute.
- Then, I allow it to cool while I prepare the cream cheese filling.
Make the Cream Cheese Filling
- I mix cream cheese with powdered sugar and lemon extract (or vanilla) until smooth.
- Next, I fold in Cool Whip.
- I spread cream cheese filling into the prepared and cooled pie crust.
- Finally, I set in the fridge for at least four hours or overnight until pie is set. When ready to serve, I add the strawberry topping.

Easy No Bake Strawberry Pie with Cream Cheese
Ingredients
Pie Crust
- 1 Graham cracker crust Prepared; 9 inches
Strawberry Pie Filling
- 3 cups Strawberries sliced or chopped; divided
- 1 tbsp Lemon juice
- ½ cup Sugar
- 2 tbsp Cornstarch
Cream Cheese Filling
- 8 oz Cream cheese
- ½ cup Powdered sugar
- 1½ tsp Lemon extract can use vanilla instead
- 1 cup Cool Whip can also use one cup heavy cream; beating in a separate bowl until peaks form
Instructions
- Prepare graham cracker pie crust according to box directions if making a homemade pie crust. Allow to cool while preparing the pie filling.
- In a medium saucepan, add 2 cups strawberries, sugar, cornstarch, lemon juice and heat over medium-low heat. Stir constantly so sugar does not burn. Gently mash strawberries as they soften and mixture thickens. After about five minutes, turn heat up to medium high and bring to a boil for one minute, stirring constantly.
- Pour thickened strawberry mixture into a separate container so the mixture will cool faster and not continue to cook. Allow to cool on counter. Mix in the remaining cup of strawberries. Then, place bowl in refrigerator for about one hour.
- In a mixing bowl, beat cream cheese, powdered sugar, and lemon extract (or vanilla) until smooth. Fold in the cup of Cool Whip.
- Pour cream cheese mixture into the cooled pie shell. Set pie plate in the refrigerator until you are ready for the next step.
- Spread the cooled strawberry topping over pie – ensuring that a nice mound of strawberries fills the center.
- Allow the pie to set in the refrigerator for 3 hours or longer. Pie should be firm before slicing.
