Ingredients for Ham Spinach Quiche
I like to chop up leftover ham from holiday Easter ham or Thanksgiving ham and keep it in quart Ziplock bags for easy meals. It makes it so easy for making dishes like this one which just need a couple of cups of chopped ham. I do the same with leftover bacon (well, when there IS leftover bacon)!
- Purchased tart shells (12)
- Pre-cooked ham, chopped
- Bacon, chopped
- Spinach, chopped
- Cheddar cheese
- Eggs
- Milk (Dairy milk or almond milk)
- Salt
- Black pepper
Substitutions and/or Additions
You can easily switch out ingredients for this spinach and ham quiche.
- Instead of cheddar cheese, you can use Swiss cheese.
- Instead of ham, you can use cooked sausage.
- Omit the meat and add leftover veggies for a vegetarian mini quiche.
- Add chopped onions.
- Add bell peppers.
- Add green onions.
- Add sun dried tomatoes.
How to Cook Mini Quiche in Tart Shells
To cook quiche you need to purchase some of the little pre-formed tart shells at the grocery store. Pillsbury sells a 14 pack of mini pie crusts. These are great ones because they are not overly sweet. Be sure to get regular mini pie crusts/tart shells and not graham cracker tarts!
Make sure there are no scratches or holes in the tart shells. If you have holes, the egg is going to leak between the crust and the pie plate when you pour egg mixture in, potentially leading to a soggy crust rather than a flaky crust!
Basically, you mix all the ingredients together, reserving a bit of the cheese for topping, and pour evenly into the 12 shells. Sprinkle with the reserved cheese. Then, you pop it into the pre-heated oven!
Cooking Time for Mini Ham Spinach Quiche with Bacon
In our oven, we cook the mini ham quiches for 18-20 minutes at 350 degrees.
The top of the crust should be golden brown and the quiche filling should be set and not jiggly at the end of the cooking time. The texture of the quiche should have ham, spinach, and bacon raised into the shredded cheese on the top layer.
Carefully, remove the baking sheet with the tarts.

Mini Ham Spinach Quiche Recipe
Ingredients
- 1 cup Ham chopped
- 1 cup Bacon chopped
- ½ cup Spinach chopped
- 1 cup Cheddar shredded
- 9 Eggs large
- ¼ cup Milk or almond milk
- 1 tsp Salt
- 1 tsp Black pepper
- 12 Tarts Mini pie shells
Instructions
- Preheat oven to 350℉.
- In a large bowl whisk eggs well, combine milk until mixed. Add ham, bacon, chopped spinach, 3/4 of cheese, salt and pepper to taste and mix.
- Place all 12 tart shells on a baking sheet.
- Use a 1/4 cup measure cup to measure mixture and pour evenly into tart shells.
- Add a pinch of cheese on top of each tart.
- Bake quiches for 18-20 minutes until puffy in the middle and slightly golden brown.
- Serve warm with a side of fresh fruit.
