I like to cook up huge packs of ground beef and and keep individual packs in quart Ziplock bags for easy meals. It makes it so easy for making dishes like this one which just need some pre-cooked ground beef. I do the same with leftover bacon (well, when there IS leftover bacon)!

How to Cook Mini Crustless Quiche Muffins in Muffin Tins
Basically, you are going to prepare these crustless quiche muffins in the same way you would prepare actual muffins. You can use a regular 12-well muffin pan that has been sprayed with cooking spray or you can use silicon muffin liners.
In a large bowl, you will mix all the ingredients together, reserving about 1/4 cup of cheese, and pour evenly into a 12-tin muffin pan. Sprinkle with the remaining 1/4 cup of cheese. Then, you will pop it into the pre-heated oven!
Cooking Time for Crustless Quiche Muffins with Bacon
In our oven, we cook this crustless muffin quiche for 18-20 minutes at 375 degrees.
The top of the keto egg quiches should be golden brown and the spinach bacon quiche filling should be set and not jiggly at the end of the cooking time. The texture of the quiche should have the cooked hamburger, spinach, and bacon raised into the the top layer.
Carefully, remove the baking sheet with the muffin pan of keto quiche muffins.
What to Serve With Low Carb Mini Quiche Muffins
