Are you looking for a tasty leftover turkey recipe? If you love the comfort of the typical chicken noodle soup, this leftover turkey soup with egg noodles and vegetables will be right up your alley.
Making Turkey Soup with Vegetables or Making Plain Turkey Noodles Soup
What I love about this turkey noodle soup is how versatile it is. As you can see by the images, I have made this with fresh veggies. Other times, if I don’t have the veggies, I just make a plain Jane turkey noodle soup with the Amish egg noodles. This is a perfect pantry recipe if you go that route.
I like to sautee some onion and celery with the seasonings in a bit of butter as a starting base before adding in the broth and the rest of the ingredients.
Broth for Leftover Turkey Soup
If you are planning in advance to make this leftover turkey soup after Thanksgiving or any other time after making a turkey, make sure to reserve the turkey broth. Fresh broth is always the way to go.
But if you don’t decide to make this soup until after the fact, you may not have much turkey broth reserved.
My preferred broth for this easy turkey noodle soup is Knorr Caldo de Tomate. It’s the best tomato broth, and I use it in instead of chicken broth in most of my dishes!
Alternatively, you can lessen the broth a bit if you prefer a turkey noodles dish that is less soup and more noodle.
White Meat or Dark Meat for Easy Turkey Noodle Soup?
For this soup, I have used leftover dark turkey meat, leftover white turkey meat, and a mix of both. You can use whichever meat you prefer. Generally, the dark meat has a little more flavor. But any of these variations will work.
What are Amish Egg Noodles for Leftover Turkey Soup?
Amish egg noodles are thick egg noodles, typically made of egg yolks and flour. If preparing your own noodles is your jam, you might check the Amish Workshops site for a tutorial on making your own noodles at home.
Where to Buy Amish Noodles?
I find Amish egg noodles at Kroger, Walmart, and my local Edward’s Grocery. For this recipe, I bought this particular brand at the local Atwood’s agri store in my parents’ town.
If you cannot find the Amish egg noodles for turkey soup, you can simply use regular egg noodles that are easily found in supermarkets.
Leftover Turkey Soup with Veggies
Ingredients
- 1 tablespoon Butter or olive oil
- 1 tablespoon Garlic minced
- 1 cup Yellow onion diced
- 2 ribs Celery chopped into small pieces
- 1 teaspoon Thyme
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 cups Carrots chopped into small pieces
- 3 Red potatoes peeled and chopped into small pieces
- 8 cups Turkey broth or tomato or chicken broth, divided*
- 16 oz Amish egg noodles wide
- 3 cups Turkey cooked and shredded or chopped**
Instructions
- Add one tablespoon of butter or oil to large stockpot and heat over medium heat. Saute garlic, onion, celery, and seasonings in pot until onions are translucent.
- Add the carrots, potatoes, and broth to the pot. Cover and simmer 20 minutes.
- Add noodles and shredded cooked turkey. Check seasoning flavor and add more if needed. (Optionally, you can add some cajun seasoning to spice up the flavor.)
- Simmer uncovered for at least 15 minutes before serving.
