Kielbasa sheet pan with potatoes and peppers is a delicious and easy dinner that comes together in just 30 minutes. It is great in the summer because it is so simple and lazy – just like our lazy summer days. And then during the hectic work week, it is a handy meal because it doesn’t involve destroying the kitchen just to cook a dinner.

This particular recipe includes protein from the kielbasa, carbohydrates from the potatoes, and vitamins and minerals from the peppers. Plus, you can easily customize the ingredients to suit your dietary needs or preferences.
Ingredients for Kielbasa Sheet Pan with Potatoes and Peppers
- Kielbasa sausage – one package (popular brands are Hillshire Farm, Johnsonville, Kiolbasa, Eckrich)
- Yukon Gold potatoes – chopped into thin slices
- Green bell pepper – chopped into small pieces
- Red bell pepper – chopped into small pieces
- Orange bell pepper – chopped into small pieces
- Yellow bell pepper – chopped into small pieces
- Olive oil
- Paprika
- Salt
- Black pepper
The ingredients are straight-forward and most everything is already in my kitchen…usually…unless the peppers have gone bad on us again!
Making Potato Pepper Kielbasa Meal
The biggest thing about this recipe is simply the time is takes to chop the veggies, potatoes, and sausage. I’m a slow chopper so it takes me longer than it probably does most people!
Chop all the veggies. Chop the sausage into rounds. Lay them out, by type with sausage in the middle, on a sheet pan.
Drizzle with a bit of olive oil, and generously add on seasonings. Pop in a 400 degree oven for about 30 minutes, flipping all the ingredients once.
Expert Tips
- The recipe calls for 4 different color bell peppers, but any color of two whole peppers could be used instead. So you can use two red peppers and two yellow peppers, for example.
- Other ingredients to try adding: peeled and chopped onion, chopped broccoli, fresh green beans, chopped zucchini or yellow squash.
- I like to serve this meal with sour cream, hot sauce, and sometimes a side of rice.
- The potatoes can be peeled or the skin left on. I prefer the potatoes with the skin on, but my girls don’t touch them with the skin so I do usually wind up peeling the.
- Red potatoes can be used rather than Yukon Gold.
- The potatoes need to be cut small enough to cook through in 20-30 minutes. Otherwise, everything could burn and the potatoes still not be done. If larger pieces of potato are preferred, they should be baked at 400F for 10 minutes before everything else is added to the pan and then baked together.
- The leftovers keep in the refrigerator in an airtight container for up to three days.
- If you need more than four servings, you will want to double the sausage, the potatoes, and the veggies for this recipe.
Kielbasa Sheet Pan with Potatoes and Peppers
Ingredients
- 14 oz Kielbasa cut into rounds
- 2 lbs Yukon Gold potatoes washed and chopped into 1/2 inch cubes (peeling on or off)
- ½ Green bell pepper Seeded and chopped into 1/2 inch pieces
- ½ Red bell pepper Seeded and chopped into 1/2 inch pieces
- ½ Orange bell pepper Seeded and chopped into 1/2 inch pieces
- ½ Yellow bell pepper Seeded and chopped into 1/2 inch pieces
- 2 tbsp Olive oil
- 1 tsp Paprika Or other favorite spice
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- Preheat the oven to 400F.
- On a large sheet pan, toss the kielbasa rounds, ½-inch cubed potatoes, and the chopped bell peppers with the olive oil. Spread the ingredients out in an even layer on the sheet pan with the kielbasa together in the center, the potatoes on one end, and the bell peppers on the other end of the sheet pan.
- Sprinkle the potatoes and bell peppers with the paprika, salt, and pepper.
- Bake at 400℉ for 20 minutes. Turn the kielbasa and continue baking until the potatoes are cooked through and the sausage is golden brown, about 5-10 more minutes.
- Remove the pan from the oven and serve the kielbasa sheet pan dinner hot. You can serve it alone or over a hot bed of rice.
