Today, I am going to introduce you to our breakfast sandwich go-to. Never having been much of a breakfast person, I find myself surprised at how much I enjoy this tasty English muffin breakfast sandwich. We have been making these ham and egg sandwiches on the regular, lately.
Basically, I live in a household of ravenous breakfast-eaters, and I have had no choice but to develop an acceptance for breakfast over the years. I still don’t eat breakfast on a daily basis….I know, I know. However, I do appreciate an occasional special breakfast – as evidenced by some of my blog posts: chili con queso egg cups, cinnamon roll muffins, and cinnamon pecan waffles.
This sandwich comes together so easily with basic ingredients we often have on hand. The only special ingredient that might be something to hunt for at the store’s is the jalapeno sauce. I buy Trader’s Joe’s Jalapeno Sauce. However, I have seen similar jars of jalapeno sauce at Walmart and at Edward’s Food Giant. Green Tobasco would work well. The sauce adds such a kick to this English muffin sandwich.
How to Build an English Muffin Breakfast Sandwich
If you study up much on the art of sandwich making, you will learn there are some hard-core ideas of the dos and the don’ts of layering a sandwich. I’m talking strong opinions, out there, folks. Some believe you need to alternate between hot layers and cold layers. Others believe condiments need to hit the tongue first before other ingredients. Some believe the meat should hit the taste buds first, etc. Many believe the perfect sandwich arrives in layers of seven. or that protein always go on first. Other sandwich gurus believe we need balance in a sandwich – a medley of textures including a little crunch and a little creaminess.
Tips for Layering Your Ham and Egg Sandwich
Here I’m going to list how I layer my own English muffin breakfast sandwich here. We build from the bottom. It looks like a lot of steps, but all the steps are super simple.
- Onto the bottom piece of bread, add the meat. (Thin meat is best, folded over once. Shaved meat will work but make sure to spread it evenly.)
- Next comes the cheese. (Smoked cheddar is great!)
- At this point, pop this bottom layer of bread, meat and cheese in the air fryer (with toothpicks) or microwave along with the plain top layer to warm it all. Lay the top layer in the fryer basket or microwave separately. You do not want cheese on it. (Heat only until the cheese melts. Do not over-crisp the toast. We do less than two minutes in air fryer at 380 or 20 seconds in microwave.)
- While the bread toasts, quickly poach or fry a single egg (per sandwich). We like to poach our eggs for 2 minutes for a medium runny yolk.
- Back to assembly…
- Add some thin slices of tomato on top of the cheese layer.
- Carefully, add the gently poached (or fried) egg.
- Add salt and pepper to the egg and garnish with a little green onion or herbs, if desired.
- Smear a thin layer of jalapeno sauce on the top half of the English muffin and put on top of the stack.
Once you press down the top layer of bread onto the sandwich, you should get a perfect amount of egg run onto the top layer of bread and onto the lower layers. If the egg was cooked just right, this should look and taste like ham and egg sandwich perfection!
English Muffin Breakfast Sandwich
Ingredients
- 2 English muffins halved
- ½ pound Deli ham divided
- 2 slices Cheddar cheese
- 1 Small tomato thinly sliced
- 2 Eggs
- 1 tablespoon Jalapeno sauce or other green hot sauce
- 1 dash Salt
- 1 dash Black Pepper
- 1 teaspoon Parsley finely chopped (optional)
Instructions
- Place 1/4 pound of ham onto bottom slices of English muffins.
- Place one piece of cheese onto each layer of ham.
- Fry or poach the two eggs to your desired doneness. (2 minutes yields a medium runny poached egg.)
- While the eggs cook, heat your bottom slice with the ham and cheese in the microwave for 20 seconds or the air fryer for 1 ½ minutes or until cheese melts. (Hold cheese and ham in place with toothpicks). You can also heat the top slice but do not put on top of bottom stack.
- Remove muffins halves from microwave/air fryer and add tomato slices to the top of the cheese.
- Gently transfer egg from cooking pan to the top of the tomatoes.
- Lightly season egg with salt and pepper.
- Garnish egg layer with thinly sliced green onion or parsley. (Optional)
- Smear a thin layer of jalapeno sauce onto top layer of bread.
- Gently place top layer of muffin onto the sandwich stack.
