Edible Sugar Cookie Dough with Heat-Treated Flour
The key for how to make edible cookie dough is to use heat-treated flour.
What is Heat-Treated Flour?
First of all, you may be wondering what is heat-treated flour. Heat-treated flour is flour that is heated – often at home in your own oven or microwave – to help eliminate bacteria. The flour you purchase at the store is raw flour, meaning no heat has touched it yet in order to kill bacteria.
How to Heat-Treat Flour
A relatively simple process, you can heat your own raw flour at home on a sheet pan in your oven or in a microwave-safe bowl. In the oven, you will want to pre-heat the oven to 350 degrees and then heat the flour for about 8-10 minutes on a sheet pan lined with parchment paper.
To microwave flour to heat treat it, you will follow a method similar to melting chocolate. Heat small batches of flour for 30 second intervals, stirring after each set of 30 seconds. Repeat these steps for one to two minutes. Some cooks prefer to use a food thermometer to measure for 165 degrees Fahrenheit. Much like with melting chocolate, it is possible to overdue it and burn/toast your flour more than intended. Stirring is important!
