This warm green chile queso dip is exactly what you need for your next party. A bit more sassy than the typical cheese dip but less fussy than many other dips, this dip is party perfect! The great thing is you can make this dip two ways. For a fuss free dip, make it without pork. If you happen to have some leftover shredded pork, toss some in for a tasty pulled pork cheese dip! This green chile queso dip with pulled pork will please most folks!
At our house, we almost always have frozen bags of shredded pulled pork. When my hubs smokes pork butt on his electric smoker, we package up four or five cup bags of the shredded pork for the freezer for easy meals. That means I almost always have everything I need on hand for this pulled pork dip recipe. And it’s so easy to pull together.

This green chile dip is a tad more complicated because it does need to be served warm. But that is what slow cookers are for, right? In fact, you can choose whether you prefer to make this smoked pork dip recipe on the stove or in the slow cooker.

What to Serve with Pulled Pork Cheese Dip?
Because the ingredients in this pulled pork dip recipe are all on the salty side, I feel this green chile queso goes great with a cracker or chip that has more of a bland flavor. Even so, I have served this dip with Fritos and Tostitos, and no one seemed to mind those combinations. Pita chips – soft or crispy – work well. Another option is to cut up pieces of flour tortillas to serve with this pulled pork cheese dip.
Green Chile Queso Is a Thick and Chunky Queso Dip
Also note the optional use of cream cheese in the actual ingredients list. I like to add the cream cheese to help contribute to the overall cheesiness and smoothness. But I have made this dip several times with no cream cheese and it turns out fine. It’s just a little thicker and a bit stronger on the chilies taste. But I do think it is overall better with the cream cheese, so if you can use it, do.
If you don’t like your normal cheese dip very thick, you probably won’t want this dip too thick either. I suggest adding a second can of Rotel (undrained) to thin the dip a little.
And if you do like thick dip, you can even serve this dip on buns for sandwiches!
Does the Shredded Pork Have to Be Smoked Pork for this Slow Cooker Queso?
No. The pork does not have to be smoked. You could use roasted shredded pork, pan-cooked shredded pork, slow cooker shredded pork, store bought pulled pork, etc. We just use shredded smoked pork because that is what we typically have in our freezer.
Can I Make a Slow Cooker Green Chile Queso?
Yes! You can make this easy green chile queso slow cooker style. Simply layer all the ingredients into the bottom of your slow cooker. Set on low for two hours. Mix it up ever so often.
Much like when making regular Rotel cheese dip in a slow cooker, a slow cooker liner can help with clean up.
You can serve the pulled pork queso on top of the chips or to the side of the plate. I like to add a scoop of fresh pico for a little color pop.
Easy Green Chile Queso (Pulled Pork Cheese Dip)
Ingredients
- 8 oz Sour cream
- 8 oz Cream cheese
- 8 oz Mexi-blend cheese shredded; or substitute shredded cheddar – about 2 cups
- 8 oz Oaxaca cheese grated or sliced into small pieces
- 4 oz Green Chilies diced
- 10 oz Rotel undrained
- 1 teaspoon Cumin
- 2 cups Pork cooked and shredded with no sauce; (optional)
Instructions
Stove Top Green Chili Dip (Pulled Pork Cheese Dip)
- In medium saucepan on medium heat, add all ingredients in order as listed.
- Once cheese is melted, remove pot from heat.
- Serve green chili dip with pita chips, corn chips, or tortilla chips.
Slow Cooker Green Chili Dip (Pulled Pork Cheese Dip)
- In slow cooker, add all ingredients, in order as listed.
- Heat on low for two hours or until cheese is melted and dip is gooey, stirring occasionally.
