Last week, it struck me that they would be perfect crushed up inside my traditional oatmeal cookies. A star was born. I introduce you to…Cinnamon Toast Crunch cookies with oatmeal! These Cinnamon Toast Crunch cereal cookies are a hit with crispy edges and softer centers.
Why Make Cinnamon Toast Crunch Cookies?
Update: This post was originally written with a different cereal in mind. However, that cereal has since been discontinued so I replaced this recipe with Cinnamon Toast Crunch, and the cookies are just as wonderful as they were originally! This post has been updated with photos, information and recipe cad information. The only thing not updated is the video below with my sweet baby helping me make cookies when she was three. I can’t bear to remove that sweet video.
The first time I made cereal cookies (the original ones that have been discontinued – Kellogg’s Cinnamon Frosted Flakes), I realized cereal helps stretch the base ingredient – in this case, oatmeal.
Also, these cookies add a touch of crunch and an extra punch of cinnamon to basic oatmeal cookies. The Cinnamon Toast Crunch adds a bit of extra crunch.
Ingredients
- Unsalted butter
- Granulates sugar
- Brown sugar
- Eggs
- Vanilla
- All purpose flour
- Baking powder
- Salt
- Cinnamon
- Oats (Quick Cooking or Old Fashioned)
- Cinnamon Toast Crunch Cereal
Making Cinnamon Toast Crunch Oatmeal Cookies with Kids
As usual, our mommy-and-me cookie baking session took much longer than had I been making the cookies myself.
It’s important when cooking with kids to always allow a repeat step so kids can feel successful with their second (or sometimes third) attempts. I could have easily taken over the pouring after Little One spilled the oats. But that wouldn’t have left her feeling encouraged to bake. As someone who doesn’t care for messes, this is something I’ve really had to work through since starting my cooking with kids journey a couple of years ago.
One of the best steps for children to help with in this recipe is the crushing of the cereal. Put the cereal in a Ziplock bag and let your little one go to town crushing the cereal!
Of course, children love to scoop and drop the cookie dough!

Cinnamon Toast Crunch Cookies with Oatmeal
Ingredients
- 1¼ cup Butter unsalted; softened (2.5 sticks)
- 1 cup White sugar
- 1 cup Brown sugar light
- 2 Eggs
- 1 1/2 tsp Vanilla
- 1 1/2 cups All-purpose flour
- 1 tsp Baking powder
- 1 tsp Salt
- 1 1/2 tbsp Cinnamon
- 3 cups Oatmeal Old Fashioned Oats is what we use
- 2 cups Cinnamon Toast Crunch Cereal
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream butter and sugars.
- Add eggs and vanilla and mix well.
- In a small bowl, combine flour, baking powder, salt, and cinnamon.
- Slowly add flour mixture to mixing bowl.
- Mix until well combined.
- One cup at a time, add the oatmeal and the Cinnamon Toast Crunch Cereal.
- Mix until just combined.
- On an ungreased cookie sheet, drop 12 scoops of cookie dough, using a medium sized cookie scoop.
- Bake for 10-12 minutes or until bottoms seem to be starting to brown.
- Allow to cool for just a few minutes before moving to wire racks.
