If you love the comfort and simplicity of chicken noodle soup, this chicken soup with Amish noodles will be right up your alley.
What I love about this soup is how versatile it is. As you can see by the images, I have made this with fresh veggies. Other times, if I don’t have the veggies, I just make a plain jane chicken noodle soup. This is a perfect pantry recipe if you go that route.
If adding veggies like carrots, I like to saute them with the seasonings in a bit of butter before adding in the broth.
Broth for Chicken Soup
Make sure you have canned broth or bouillon cubes or powder for creating your own broth. If you are boiling your own chicken ahead of making this dish, you should use your freshly-made chicken broth, of course.
Typically, I make a ton of shredded chicken ever so often in my slow cooker. That way, I am stocked on shredded chicken in the freezer so I have to use canned broth or bouillon. By the way, my favorite broth is Knorr Caldo de Tomate. It’s the best, and I use it in place of chicken broth in most of my dishes!
Alternatively, you can lessen the broth a bit if you prefer a chicken and noodles dish that is less soup-y.
What are Amish Egg Noodles?
Amish egg noodles are thick egg noodles, typically made of egg yolks and flour. If preparing your own noodles is your jam, you might check the Amish Workshops site for a tutorial on making your own noodles at home.
Where to Buy Amish Noodles?
I find Amish egg noodles at Kroger, Walmart, and my local Edward’s Grocery. However, I have also seen them sold at random places – like an agri store. This is the last brand I bought, though I am not overly particular to one brand.
Chicken Noodle Soup with Amish Noodles
Ingredients
- 1 tablespoon butter or olive oil
- 1 tablespoon Garlic minced
- 1 Yellow onion diced
- 2 ribs Celery chopped (optional)
- 2 cups Carrots shredded
- 1 teaspoon Thyme
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 8 cups Tomato broth or chicken broth, divided*
- 1 package Amish egg noodles
- 2 cups Chicken cooked and shredded (about 3 chicken breasts)
- 2 Bay leaves
Instructions
- Add one tablespoon of butter or oil to large stockpot and heat over medium heat. Saute garlic, onion, celery, carrots, and seasonings in pot until onions are translucent.
- Add the broth to the pot. Cover and simmer 20 minutes.
- Add noodles, shredded cooked chicken, and bay leaves. Check seasoning flavor and add more if needed.
- Simmer uncovered for at least 15 minutes before serving.

This is now a favorite for my family. My kids actually love it too! The recipe is nearly perfect as-is, but I have a few suggestions! Egg noodles soak up liquid quickly, so I automatically use at least 12 cups of broth. I’ll add another cup of water and bullion if it soaks too quickly. If you like a more savory chicken soup, don’t use 2 bay leaves. I cut my use down to about 1/2 one leaf. If you’re in a hurry, use a store-bought rotisserie chicken. If you have time, cook your chicken like this: chop into bite size and grease lightly in a bowl. Sprinkle ⅛Tsp salt, ¼Tsp black pepper, ¼Tsp onion powder, ¼Tsp garlic powder, ⅛Tsp paprika, and ¼Tsp dried basil into the greased raw chicken pieces. Heat a bit more oil on med-high in lg skillet. Cook 5-7 minutes, flip and add 1Tbsp butter to chicken. cook 5 more minutes or until 165°. Rest 5 minutes. Add this DELICIOUS chicken into soup when this recipe says to. Cooking the chicken this way adds so much more flavor, and it is 100% worth it!

Sounds yummy especially on a winter night🥰 I had just bought some Amish noodles and had leftover rotisserie chicken so I thought this sounded perfect! Although I accidently threw the chicken in after broth/water. I was wondering will the chicken taste drier by adding it in earlier? Also, I didn’t have bouillon cubes or broth..just a lil still in fridge so I used water for the rest of it..added a couple spices tho..so we’ll see how it turns out after a while simmering! I love these bc you can throw in and add as you please🥰 thanks for sharing!

Hi, Kari! You are correct. The Knorr tomato broth I mentioned is actually made from bouillon granules added to boiling water. I simply add eight cups of water and add the number of teaspoons listed on the Knorr bottle per cup. My bottle says to use one teaspoon per boiling cup of water…so you would need 8 teaspoons total. Now, if you wish to use a regular chicken broth, you can do the same with the chicken bouillon and boiling water. Or you could purchase store-bought chicken broth. (I find the bouillon granules to be much more economical than buying canned chicken broth each time I need broth). Hope this helps clarify!

I’ve never used tomato broth before. But when I look it up it’s more bouillon then broth based and the recipe calls for 8 cups. What or how do i make it 8 cups of broth? Thank you!
