Ingredients for Cheeseburger Pickle Poppers with Bacon
- Dill pickles – cut in half lengthwise (each pickle will yield two pickle poppers)
- 5 Bacon slices – cut in half lengthwise (each bacon piece should cover two pickle poppers)
- Ground beef
- Onion – chopped
- Garlic – minced
- Cream cheese – softened
- Cheddar cheese – shredded
- Salt
- Black pepper
- BBQ rub seasoning – or any spicy seasoning (stick with something that would work well on a traditional cheeseburger)
Preparing Cheeseburger Pickle Poppers with Bacon
Preparing these bacon cheeseburger pickle poppers is simple. In a skillet, brown the ground beef with some onion. While the meat cooks, slice each pickle in half lengthwise and scoop out the insides of dill pickles. When meat is ready, drain the meat and add salt and pepper.
Next, in a mixing bowl, mix the cream cheese, cheddar cheese, and the drained meat in a medium mixing bowl. Scoop the cheeseburger filling into the pickle shells.
Slice each bacon piece lengthwise into two long strips. Wrap a bacon slice around each pickle, making sure the ends of the pickles meet or at least go under the bottom of the pickle.
Dust the pickles with the bbq rub or other spice of your choice.
Pop in a 425 degree oven for 15-20 minutes.

Ingredients
- ½ lb Ground beef
- ¼ Onion chopped
- 2 tsp Garlic minced
- 1 tsp Black pepper
- 1 tsp Salt
- 5 Dill pickles large
- 2 oz Cream cheese
- ½ cup Cheddar cheese shredded
- ½ tbsp BBQ rub or other spice of your choice
Instructions
- In a medium skillet, brown the ground beef with the onion and garlic.
- While meat is browning, deseed and hollow out the pickle halves.
- Drain the cooked meat, and add salt and pepper.
- Place the hot meat mixture in a mixing bowl with the garlic, cream cheese and cheddar cheese. Stir to combine well.
- Stuff the pickle halves with the meat mixture.
- Wrap a slice of bacon around the pickles, and place them seam side down on a parchment lined baking sheet.
- Sprinkle the pickle poppers with BBQ rub seasoning or other spice of your choice.
- Bake for 15-20 minutes, or until the bacon is done to your liking.
