Traditionally, blueberry crisp is made with an oat topping. And while I love that version, I love this blueberry granola crisp version a little bit more. It’s because of the crunch of the granola. I love things with a bit of crunch! So which version is for you?
Blueberry Crisp with Oats
Let’s start with blueberry crisp made with oats. Blueberry crisp made with oats is a classic choice that offers a slightly different texture and flavor. In fact, the first mentions of fruit crisp desserts seem to go back to the early 1900 in the United States. Oats provide a hearty, chewy texture that pairs well with the juicy blueberries. Oats are also a great source of fiber and protein, making this version a more nutritious option.
However, oats can also be bland on their own, so it’s important to add some sweetness and flavor with spices like cinnamon or nutmeg. The topping will add the sweetness to a fruit crisp so the last thing you want is a bland topping!

On the other hand, granola is a popular choice for topping fruit crisps because it provides a crunchy texture and a sweet, nutty flavor. Of course, granola is typically made from oats so either version you choose will likely include oats. It’s just that the oats in the granola are crunchier due to the preparation process.
In addition, granola is often made with healthy ingredients like oats, nuts, and dried fruit, which can add some nutritional value to your dessert. However, granola can also be high in sugar and calories, so it’s important to choose a low-sugar option or you can make your own homemade granola with healthy ingredients.
Expert Tips for Blueberry Crisp with Granola
- If the granola topping seems too dry, you can a bit more melted butter to the blend.
- Do not use a deep dish baking pan. A shallow pan works best. This particular recipe needs a smaller sized baking pan. We use the same small pans we typically use for baking brownies. An 8×8 square pan is the one we typically use. However, you can use a 5×7 baking pan (rectangular) if you want to halve this recipe for only 3 servings (as seen here in the photos).
Blueberry Granola Crisp
Ingredients
Granola Topping
- 4 tbsp Unsalted butter
- ½ cup Brown sugar
- 2 cups Granola
Blueberry Filling
- 3 cups Blueberries
- 1 tsp Cornstarch
- 4 tbsp Brown sugar
- 2 tbsp Lemon juice
Instructions
Making Granola Topping
- In a medium saucepan, combine unsalted butter and brown sugar – until butter is melted and all is combined.
- Add granola and stir until all the granola is coated with the melted butter mixture.
Make Blueberry Filling
- Preheat oven to 350℉.
- In a separate saucepan, add blueberries, cornstarch, brown sugar, and lemon juice. Stir until all is combined evenly.
- Over medium heat, cook blueberry mixture for 5 minutes. Stir every minute or so to prevent sticking. The blueberries should be softened and the sauce thickened.
- Transfer to a 9×9 baking dish. Spread the cooked granola mixture evenly on top of the blueberries.
- Bake in the oven for 15-20 minutes. Blueberries should be bubbling around the granola crust.
- Remove and let cool for 5-7 minutes. Serve warm with ice cream.
